Finally made it here after signing up for waitlist on a block of dates. Apparently another good way of landing a seat is to check their Tock site for cancellations. Anyway, the whole experience was just exquisite. Sushi was top-notch. The vibe was very laid back... Chefs Keiji and Jun, as well as the servers, were all so chatty, friendly and so attentive. Everyone at the counter during my seating was a regular, so by the end of the night, we all felt like family. Kudos to the person celebrating a birthday who brought a Japanese cheesecake which Chef Keiji shared with all of the guests. What a great time! Hope to revisit ASAP!

Cannot recommend this place enough. The staff is incredibly friendly, attentive, and knowledgeable. I sat at a table, and even still the interaction with the sushi chef was great. Next time I will be sure to get a sushi bar reservation. The price is very comparable to other places in Seattle. Drink selection is small, but they have some good choices. For the food: the flavors were amazing. Each dish is unique and stands out on its own, but the salmon roe and black cod were probably two of my favorites. I've been to a good bit of omakase all over the states and this is easily one of the best I've had.

Where do I even begin? My partner and I have been talking about coming here for around a year now and we decided to for her birthday.
The entire experience was truly one of a kind. Chef Keiji passion for his art is on display the entire time you’re there. Sitting at the bar is absolutely worth it. Keiji’s conversation and the interactions with everyone else at the bar make it feel like you’re at home and a friend is preparing food for you. Keiji will tell you about the history of the roll, how long it’s been in Japanese culture, where he got the fish from, etc.
The food itself is world class. From the starters to the rolls, everything you try is unique and unlike any other roll you’ve ever had.
Highly recommend the Sake Pairing with your meal, you’ll try several different sakes that pair well with specific pieces and the staff are attentive at making sure your glasses never run empty.
There’s a reason why reservations are hard to come across, but it UNDENIABLY lives up to and exceeds the hype.

Quite simply one of the best meals I have ever had, sushi or non. The food was utterly incredible, beautifully crafted with complex and intricate layers of flavors. From the opening bowl of clam and geoduck soup, through the salmon roe, incredible barracuda, mackerel, and salmon, to the final coronet of tuna, it was a phenomenal experience.
We sat at the counter, and the Itamae could not have been more welcoming. He explained every dish in detail, including how he crafted the various flavors. He let us taste sake, explaining how it complemented the dish. He discussed how he changes the menu with the seasons, getting fish from where it is best for that time of year.
From start to finish, this was just amazing. We'll be back in winter for my birthday. I can't wait to taste the changes

It's a great omakase but a bit mediocre among other omakase I've tried.
I've been to multiple omakase experiences in the Seattle area and most of them provide full course experience with a variety of innovative dishes, within the price range from $130 to $300. The omakase experience at ltd edition sushi is a bit bland. Dishes taste good but few of them surprised us and beyond our expectations. If you want to try traditional style, this could be a good place but don't hold your expectations too high

An incredibly fun experience!! Mattie and Chef Jun made my friend's first omakase experience absolutely delightful (the sake pairing definitely helped haha) and comfortable! Would highly recommend to anyone looking for an elevated sushi dinner in a surprisingly relaxed atmosphere.

It is hard to review a $250 dinner. What would make it worth the same as $50 dinner more than a $200 dinner?
Omakase is hard to recreate as chefs require freshly harvested very high quality ingredients from specific regions of Japan. It is no secret that what you pay for is mostly same day seafood shipment from across the ocean.
That said, I do believe that you should try omakase at least once. It will make you appreciate seafood beyond salmon poke bowls and shrimp scampi.
Ltd was amazing. They didn't do the cheap trick of adding bone marrow and wague to every dish. Everything I tried was pristine!
I also highly recommend the sake tasting. It is a great value and can serve as a great sake intro for people who never tried any.

I’ve been to Sushi Sukiyabashi Jiro in Tokyo, Sushi Kashiba here, and numerous other places in Japan, up and down the coast, NYC. This is by far my favorite experience.
It’s an intimate setting with a fun fascinating chef Keiji, the food is diverse and divine, and the sake selection is impeccable. Keiji absolutely made my date’s birthday night, and mine!
Get an advanced reservation at the bar and make your night.

Even though I have been blessed to have had numerous epic meals, the dining experience at LTD Edition Sushi is easily one of the five best dining experiences of my life and maybe even the absolute best ever.
The food is both creative and exceptionally prepared with the highest quality ingredients, the service is seamless and as friendly or unobtrusive as you want it to be, and the ambience (sitting at the sushi bar) is jovial and more akin to eating and drinking in a dear friend's kitchen than at a fancy restaurant.
While the price is high ($277, including the very generous sake pairing), it is not an expensive meal, as a night at LTD Edition Sushi is one of the best fine dining values that you can find anywhere.

We got tuna, sea urchin, cod, mackerel, scallop, crab to name a few of the different dishes we were served. Service was very nice, diligent, and explained all the dishes well. Came here for an anniversary dinner and it was the best meal me and my husband have ever eaten together. We’ve had quite a few omakase dinners in our lifetime and this one is by far, the most memorable. It’s pretty pricey to eat at the bar, but you’re really paying for the experience of being served by one of the coolest sushi chefs in the city. Chef Keiji is the sweetest and most charismatic host/sushi chef I’ve had the pleasure of dining with. He used to be a DJ too so the music selection definitely contributed to the vibe. He makes you feel like he’s an old friend that took so much time, love, thought, and effort to make you an amazing dinner. If you’re going to splurge on an omakase dinner in Seattle, this is the place to do it at.

Honestly, it is the best sushi we have had in the area. I am not surprised that it is so difficult to get reservations here. Everything was fresh and meticulously prepared. You can tell they take pride in what they do, and it's reflected in the food and ingredients. I love that you are able to interact with them and that they explain each course. Menu changes by season, but you can see what they have on Instagram. The only downside I can think of is that parking can be difficult to find. It is pricey, but I think it's worth it and would go back again in a heartbeat.

You may have some conceptions about what japanese cuisine is: fish and rice, maybe colorful rolls, fried vegetables, etc. But that only tells a one dimensional depiction of japanese cuisine. Ltd edition sushi welcomes you to broaden your understanding of the art of japanese cuisine.
The art of this cuisine and the beauty of this meal starts hours before you arrive. I've walked by this restaurant many times during the day and what has impressed me is how meticulously the chefs plan and prepare for the dinner service. At times, I've seen them preparing the fish hours before service, always using fresh fish.
Entering the restaurant for our seating, I was immediately greeted by the sweet smell of fresh salmon eggs--a teaser for the meal to come! We weren't lucky enough to get bar seating, but found table seating was still a great experience because one of the chefs serves food to the tables too and you can tell both his expertise and care for the food. The chefs were happy to answer questions I had about the fish and painted a story about the meals that we were to eat.
This wasn't just a sushi dinner, it was an artful meal showing different techniques and dishes. Soups, boiled fish, and sushi alike. Every dish was crafted from fresh fish and local ingredients (in some cases local fish too). The chefs test all the ingredients beforehand to make sure that the final product meets their standards. And the balance of flavors and textures that the chef's achieve was immaculate. It felt like a beautiful musical piece on my taste buds with mixtures of salt, umami, sweet, and even sour in the dishes with pickled sauces. Every course had its own character and played a cohesive part in a larger tale. The chef's even took liberty to experiment with their art, creating doungeness crab gelatin flakes and a unique take on a clam chowder.
Food can take many forms. It can be a quick meal to sustain you or an art form to be cherished and awed by. Ltd Edition Sushi is the latter. While the price is high, you are going to enjoy an authentic taste of japanese cuisine marrying the unique local ingredients of the PNW.

Tasty but I prefer Shiros.
I think the place here has stronger flavors, lot more vinegar, fermented and salty notes. A bit more on the creative side. The first dish was a cold potato puree with dashi ( inspired by clam chowder)
Sea snails were marinated in a sweet soy sauce, the texture was more on the rubbery side.
The fish in soup had a more slimy texture.
Highlights: uni, fatty tuna, big salmon roe on top of rice , salmon with onions, hand roll
For dessert there was a sweet piece of tamago cake and a fish liver sushi.
The 545 course ran late so while I had a reservation at 745, didn't sit down until past 8 and end up leaving past 10:30?
Uni and fatty are a staple year round. They change their menu every 3 months so sept/oct/Nov will have similar offerings.
Service was good, someone took my jacket upon arrival. The server would wipe everyone's dish after each piece( to remove soy sauce).
Reservations were booked within minutes. good luck.

So hard to get a reservation here! Set an alarm and within a couple of minutes, all time slots get booked. I finally snagged a Monday evening late dinner slot for a table of 4. The effort you have to put in to get a reservation pays off. The food, drinks and experience were all amazing. Very very expensive Omakase but everyone agreed it was worth it.

My girlfriend and I ate a lovely dinner at 7:45pm reserved sitting at the Sushi Bar at Ltd Edition on CapHill. It was one of the best sushi I have ever had. Fixed price and set meal, lots of food! I went away full. Every item individually prepared and explained and so fresh, I recommend the Toro and Ortoro, the Ebi Shrimp, Scallops and the fresh crab.

Anything less than 5 stars would be disrespectful to LTD sushi. If I could give 8/5 stars I would. I could write an essay about the fish that's overnight shipped from Japan and elsewhere, how they know the waters and season that changes flavor and texture, what to pair along with each type of fish, perfectly prepared rice that is the cornerstone of all sushi, sake pairings, and the order of service that plays like a symphony of visual, textural, and flavor across your palate. My wife tried for 6 months to get a reservation and let me tell you, as a hardcore foodie and home cook, it was absolutely worth it.

Extremely hit and miss, this is NOT your average sushi and def. more suited for hardcode sushi enthusiasts or people looking for a dining _experience_.
I personally liked about 75% of what was served, some of the other stuff made me question my life's decisions (I did eat all of it though).
Everything was exceptionally fresh and prepared right in front of us not show cooking level but some high precision work.
The chefs round up the entire experience, they were obviously good friends, sharing little stories and generally making the entire experience feel more like a dinner w/ friends than eating out.
If you go here prepare for:
- Eating things that were alive just a minute ago.
- Eating whole squid
- Sea urchin
Tl;dr, it's a great one-time thing, not suitable for squeamish people, I probably won't go again but I had an _interesting_ time and I would recommend this to anyone that likes experimenting.

This restaurant offers a fine dining sushi experience, with a set course menu prepared by the creative chefs. Although the food portions may be small, the quality and presentation of each dish is impressive. Sake pairing is highly recommended, but not required. We sat at the sushi bar and enjoyed about 15 items for a total of $430 for two people (paid at the time of online booking), excluding alcohol. It's worth noting that the table experience is handled by a different chef, so wherever you sit, you can interact with the chefs and enjoy their conversation. Overall, I give this restaurant three stars, as I was expecting a larger portion size of at least 20+ items for the price tag.
Tips: There is ample street parking available in front of the restaurant.

Pretty good sushi! I especially liked the hand roll, the crab item, and this liver item that I forget the name to. The service was also pretty good; our waiter really helped to explain all of our dishes, and how to best eat them. Pretty expensive (as usual for sushi), but pretty on par with some other sushi places in Seattle. Since of the better sushi I've had, and still behind a couple for me in the city, but Ltd Ed Sushi is still a very good choice to try.

Great atmosphere. The experience was awesome. Getting sushi made table side was so fun. I think the thing to do, however, is sit at the bar. So for anyone who wants to brace making a reservation (which is quite stressful, imagine when concert tickets go on sale and that frenzy) I would go with a sushi bar reservation.

I normally don’t leave reviews for places I like, but I feel I have no choice. I took my girlfriend here for her birthday and I have absolutely no regrets, it is worth every penny. It feels like you’re getting served the best quality sushi (hell, I normally am not even a big fan of wasabi and ginger, but even that was really good) by close friends. Set an alarm before reservation time and get a spot, you won’t regret it.

I’ve done quite a few omakases, even some in Japan, but none has been as fun or unique as the omakase we had here with Chef Keiji! I have never had oyster nigiri, monkfish liver (which is kind of like foie gras but better), or Dungeness crab nigiri, which is one of their signature pieces. I took a tip from other reviewers and did the sake flight, which I highly recommend! I didn’t think I liked sake but everything was great and we got to try new age, floral, and dry versions. I love that Chef Keiji uses what is in season, so you will always have a unique experience outside of the “usual” pieces like toro and uni. Chef Keiji is very personable and we had such a good time chatting and learning about his craft. I’ll definitely be back once I can score more reservations!

Not easy to get a reservation here but it’s definitely worth it! The whole experience (at the table) was amazing and made us forget about the 15 minutes late. Everything was fresh and tasty. Thanks to the Omakase experience we tried products we wouldn’t have picked. The service is well paced and well explained. We also recommend to have the sake pairing (we shared one for two because it would have been too much, our waiter warned us before and we appreciated that). The quantity of food was perfect.

OMG, this place was such a treat!
Chef Keiji is a fun and personable chef with such a great sense of humor, making this an unparalleled omakase experience.
He’s incredibly passionate about his craft and sourcing his fish, ultra-focused on making sure everyone has the best time by being so attentive to every single person seated at the sushi bar. He also has the best stories and he creates such an intimate vibe that it really is like hanging with a generous friend showing off their chef skills!
Don’t be like me and miss out on the sake pairing. The menu said “3x3oz sake glasses” but it’s not what you’d think! Chef Keiji made sure my friend’s 3 (large!!) sake cups were never empty for all 3+ hours with 12 different exceptional sakes. At one point, he split a can of his friend’s Away Days Pilsner for everyone around the table too!
Chef Keiji absolutely nailed every single piece he served us. He will not skimp on his customers and is a master at keeping the vibes going. I can’t wait to try other season’s offerings and I’ll be back in a heartbeat!

Extremely fresh sushi in a very intimate setting. My favorites were ebi, uni (from
two different locations), and chef made tamago. I don’t know how the chef is able to source all this fresh sushi with supply chain issues, so definite kudos! This is a must try.

Kenji is a wizard. Half the battle is sourcing fresh fish. I don’t know how he does it. Mind blowing.

What an amazing experience! This is the best sushi restaurant in Seattle, hands down. The owner/chef makes the experience unforgettable with a perfect selection of fish and a well studied progression throughout the meal. If you want the most amazing authentic sushi, this is the only choice!

Superlative sushi and saké experience. I went twice in July. Although there were only a couple weeks between the meals, the saké pairings on each night were varied, and key parts of the menu had changed to harmonize with what was the most fresh at the moment.
In addition, the ambiance of the space is very immersive. It is clear that every decoration and detail was carefully considered.
Thank you chef for a pair of great meals, and for answering all our questions on 魚 and 日本酒.

than I expected and Keiji clearly knows his sake. The highest compliment I can give is that it’s one of the few restaurants I’ve been to that makes me feel like I’m back in Japan. If you like sushi, go here! It’s my new favorite sushi place in Seattle for sure.

Probably the best meal we’ve ever had in Seattle. The chef and his staff were so welcoming and prepared the most incredible bites of sushi I’ve ever had. The experience in unique in the sense that you eat alongside a very small group of people and get to enjoy the incredible experience together. We can’t wait to go back and would recommend to everyone.

One of the best, or arguably the best sushi in town. The whole experience was just amazing especially with sake pairing. Sushi was top notch and service was too good. Hiro san took care of us explained every dish kindly and in details. It is like having a private dinning. Highly recommended

Incredible. This is some of best sushi I’ve ever had in Seattle. For the quality of the fish and everything, the price of omakase is a bargain. The sake flights were a great match for each course and the server explained each fish and sake. Great experience. I would recommend sitting at the bar.

Dining at Ltd Edition was a very special experience. We were being served by Chef Keiji that night and he created a warm, inviting atmosphere that I have always wished to have eating at the sushi bar.
The omakase was like none I have had before. Everything served was seasonal, indeed "limited edition", and as Chef Keiji introduced each of the nigiri to us, he explained the characteristics of the fish, its season, and the qualities of each that can be appreciated. I learned so much that night! Oh, and the sake pairings! Incredible. Such flavours!
I look forward to coming back. This is a special place is worth making a trip to Seattle for.

A truly amazing experience; if you want to try Omakase in Seattle, you absolutely have to try Ltd Edition Sushi. The food is delicious, but what truly distinguishes the experience is the amazing atmosphere at the sushi bar. Chef Kenji is attentive to individual preferences and fun to chat with— I’m eagerly looking forwards to the next time I visit. The combination of spectacular food and small restaurant atmosphere is truly hard to find, and is unmatched among all the restaurants I’ve visited in Seattle.
If you can, get a reservation at the sushi bar, and try the sake pairing. If you love sushi and sake, there’s no way you could regret it.

This was one of the best sushi omakase experiences that I've ever had. Brought me back omakase in the Tokyo tsukiji fish market.
The entire experience was top notch. Chef was a delight and told us lots of interesting facts about the fish and how it's been prepared. I recommend trying the sake pairing and the add-ons! The ankimono in particular was the best I've ever had; a creamy delight of the sea.
Every piece was great. Chef had several items that were juxtaposed: two unis from different places, a fresh shrimp + a kombu marinated one.

Wow! If you like an omakase sushi experience Ltd is a must try. There are only 14 seats and 2 seatings each night so the reservation is tough to get. The space is simple and centered around the sushi bar and chef. We ordered the sake flight and the chef just kept pulling out new bottles and refilling our glasses. We must have tried 10 different sakes. There were 4 seasonal add-ons to choose from, we had the baby sea eel, it was so interesting and really good. The omakase is very traditional but the chef has a very unique selection of fish including sea robin and trigger fish which I had not tried before. Everything was delicious and all for a very reasonable $120.

Wow. What an amazing experience! I got a last minute opening from a cancelation and was able to sit at the sushi bar. I highly recommend the sushi bar! The chef is so fantastic, a real artist! When I sat down, he said "Im going to make you happy," and he really did lol. Every piece of fish was treated with so much care and it was all so beautiful. So grateful for the experience!

100%, hands down the single best culinary experience I have had in like... a decade. The atmosphere is intimate and inviting and the serving team is accommodating, knowledgeable, and fun. The omakase was a symphony. From start to finish we were in a state of enchantment. As soon as I had my first bite I had goosebumps. I could take the time to write all of the details of every piece and all of the nuances of the meticulously crafted courses that we experienced, but it wouldn't do it justice. It is better for you to go to LTD yourself and let owners Keiji and Jun show you themselves; they are truly gifted in their craft. Get the sake sampler and let the professionals do their thing. And if they have it, get a glass of the Kamoshibito Kuheiji 'Eu du Desir' sake, it was honestly beyond anything I could imagine a sake could be.

Visited today with my girlfriend for the omakase. The ankimo was absolutely delicious and rare to find, especially in Seattle. The selection of fish is seasonal, unlike any other place offered around the area. Unfortunately a family emergency came up, prompting us to leave halfway through the course. Everything we had was of excellent quality, the fish were tender, mostly flown in from Japan, and definitely tasted better than all of the sushi I’ve had in Seattle. I’ve experienced omakase across different restaurants in Asia and Tokyo but have yet to find one in Seattle that delivers the same quality & style as traditional edomae sushi. This will definitely be my go-to-spot. It’s not only about the food here, the service is exceptional. When I notified the chef that I had to leave due to a family emergency, the chef without hesitation offered a full refund of the meal, despite us eating half of the course already. It shows that they care about delivering the best experience, rather than taking money from customers. I’m also blown away as to how the omakase is only 120$, when the quality of fish and level of service is as good as if not better than omakase in Japan that costs double or even triple with similar quality. It’s not only the fish too, the rice is wonderfully seasoned, paired with fresh wasabi that has a incredibly complex flavor. Taking into consideration the costs of fish being flown in from Japan, 120$ for this 15-course omakase is definitely a steal. My only recommendation is for the chef to take the gloves off, so that the temperature of the sushi is better controlled and maintained when served, however because of covid wearing a glove is understandable. Regardless, everything from the food, to the chef, to the staff was absolutely fantastic. I have made reservations to be back with my visiting parents in a few weeks, and look forward to having an exciting omakase experience.

It was wonderful experience dining here at the sushi bar. Chef Keiji was very friendly and he made us feel like eating at home. One of the best sushi I have ever had in Seattle. The restaurant is focusing on sushi and sake. Definitely recommend it if you are sushi lover. We will come back next month to try it again!

What is there to say but wow! We had such an incredible time at Ltd Edition Sushi last night. We were there to celebrate a birthday and the owner went out of his way to make the night special. The mood and the atmosphere were beyond compare, and the sushi itself was the best I have had outside of Japan. We will certainly be back very soon!

A truly memorable sushi experience in Seattle. We had a fantastic time with the team out at LTD. The ambiance is very minimalist and cool like the menu which is omakase only with a limited drink selections. I went with the sake flight and the team kept the sake flowing all night. The fish was out of this world, either local or from Japan, extremely seasonal and without a bite to disappoint. The best part to me was the conversation at the sushi counter. We were so welcomed by chef Keiji, it felt like you were having dinner with your friends if one of them was a world class sushi chef. We literally booked our next reservation while we were in the restaurant. Absolutely incredible night and worth the trip/money/whatever it takes. Can’t wait to come back next month.

Absolutely amazing! The fish was top notch, both local and flown in from japan. No sacrifices were made and quality is king when it comes to the ingredients,
The service was attentive and fast. I can not speak highly enough of the owner Keiji! He was an awesome host and a joy to talk with, super knowledgeable and talkative, he has a good answer or anecdote for everything he serves.
The restaurant itself is very down to earth and comfortable to eat and talk in, very intimate but not small enough to feel cramped. It was a fantastic setting to eat the best omakase I've ever had.
I can not recommend this place highly enough and I can't wait for my next meal!

I have been all around the world eating sushi. I have Been to the fish market in Japan. I have tried every place in Seattle that does omakase. Here you can taste the difference. They do a great job of making once in a lifetime flavors. Here you can depend on quality above all else. Simple and complex flavors that will leave you wanting more. My husband and I went to an Omakase dinner today which is Christmas Eve. The chefs are very friendly and all the staff are very nice. They serve very traditional sushi with modern decoration and music. Every sushi we had there was amazing. It's simple but taste excellent. The quality is top notch and the portion is very generous. I don't drink alcohol but they serve me hot tea. The server changed my tea every time it's empty or when my tea got kinda cold. That is a little thing but it made my experience so much better. Thank you. They are just open a few weeks ago. I would like to give them 5 star and speard the words. These guys work hard and they deserve recognition. We will be back in the near future. Thank you Chef Keiji and the team.

Our friend experienced his first omakase with Keiji and he was blown away. We had a wonderful time talking to him and the fish was amazing. A huge variety of different local and japanese fish presented in a different way. Keiji made sure we didn't eat any ramen afterwards and made extra sushi for us to eat and also offered us some sake as well. Would definitely recommend to all our friends and will be back for more!

Exceptional omakase at an incredible price! If you are lucky enough to score a reservation here, absolutely nab it!
Since they only seat 32 people per day, Ltd Edition Sushi is able to go above and beyond with the quality of their ingredients and really outclass their local competition. Not only does the small restaurant size allow them to serve some unique cuts of fish that I’ve never seen elsewhere, but this also allows them to use commercially limited ingredients like fresh yuzu and real wasabi root. Every bite we were served here was melt-in-your-mouth sublime — an experience that was enhanced even further through owner & Chef Keiji Tsukasaki’s deep passion for, and immense knowledge of, his craft. He was engaged with the entire bar throughout the omakase service, even going as far as to memorize everyone’s names!
In summary, Ltd Edition Sushi is truly top-of-the-line, and might just be the best omakase experience in the PNW. We can’t wait to return!

The new owner is amazing!!! My partner and I are regulars who used to dine with him when he was at Kashiba and I'm so happy he's started this place!
The atmosphere is fantastic, the food is really incredible, and the chef is extremely knowledgeable and nice. They only do omakase (with drinks and optional soup) and a limited number of seating per day. You can grab a res on their website, I'd suggest a counter spot! The sushi looked really pretty, I've uploaded some to the photos section here but I was too busy stuffing my face to grab pics of everything.

I have very mixed feelings about this sushi takeout place. The service is prompt and very friendly, the packaging exquisite but the sushi itself......
I picked my order 15 min late and was home within another 15 min and my wife and I were into it well under the time recommended by the chef to eat it.
First of all, I did not like the rice, which is a mix and also as the accompanying sheet says, with a little added soy sauce. However, this is a personal preference, I prefer white sushi rice like all other well known takeouts do (Kashiba, Shiro's, Wataru, Nishino, etc.).
The main problem I had was the sushi itself. Not all of it, but in the case of two pieces the fish was dried out, opaque, and stuck to the rice. Some of the other less fatty pieces also felt dry. The piece of roll,, on the other hand was leaking uni. I had the feeling the omakase set had been prepared far ahead of pickup time. Had it been fresh made it might have been a very nice experience.
Don't feel like trying it again, though
