Hama chili 💓🎯

Arrived early to queue for limited seats. We were seated quickly for lunch and service was prompt. Food was great except for the edamame that was over cooked and over salted.

Parking is always a challenge in West 7th. Do not pay at the parking spots in front of the building. Wait to go inside and scan the QR code just inside the door. If you pay before walking in they cannot refund you.

In general we love this place. They have raised their prices on their food which we kinda expected to happen when their dallas location opened. But now this area was already far for us but now the parking situation sucks. We just paid $22 to park since waiting for seating was already 1.5hr. Come to find out. Hatsuyuki does not validate your parking even though it was right in front of their restaurant.

This was also the first time we’ve left smelling very gross. Our clothes and my hair stunk like old frying meat or something, as if we went to kbbq. Very strange today it smelled inside the restaurant.

I want to gatekeep this restaurant so bad it’s that good.

But I’m joking. Don’t gatekeep. These chefs and managers deserve every ounce of reputation they get. The wait is around 1.5 hrs on the weekends. The chefs are meticulous and careful about the flavors of fish and pairing. The owners care and remember people who visit their restaurant often. Their food is outstanding. Their price is fair. The fact that they even run out of specials should be a strong indication that their inventory is fresh and the customers are ordering multiples of the same item. It’s likely the best sushi restaurant I’ve eaten in the US inclusive of NYC, Seattle, LA, and Hawaii. At the time of my review they have a 4.8 star rating on Yelp as well, and anyone who uses both google and Yelp know the scale.

The only downside is that it’s not a very beginner friendly place to order. The specials menu is written daily on the chalkboard located in the back. Handroll is in the name, but I would say their nigiri and special carpaccio pairings are where this place shines. You could ask for a few recommendation but usually when you see “Gen-masaba or kinmedai or engawa” you’ll be excited to get your hands on some rare but delicious cuts of sushi otherwise rarely seen outside of Japan.

It was very busy and the lady greeted me and was decent. The guy was a little more friendlier. The place was a little tricky to find using a GPS. I went in a ⭕ three times before finding it! 😂 I almost gave up! The amount of food was decent. I knew that it'd be pricer downtown. At first glance it didn't look worth 66$ but it's a good amount. I'd go again at maybe a different time. Maybe it's not so packed. The service was fast. The sushi wasn't exactly what I expected to get. I thought when they said hand roll that it'd be the actual hand rolled sushi that's like one whole big piece of fish, wrapped by hand in seaweed.

Was so good our first day on Saturday that we came back the next day Sunday for dinner, but unfortunately some of the specials we were looking forward to were out. Now we know to come early on the weekend if we want to try the other things we missed.
First of all, there are no reservations, you just have to check in and wait 1-1.5 hours. If you love sushi, the wait is worth it. Just bring an activity to do or hangout with your party in the area.
There are no single party tables, just one continuous bar shaped like a square with the chefs in the middle facing outward.
You will have an assigned chef who handles all your food depending on where you sit. You start off with a slip of paper where you can write your initial order down and then wait for the chef to present you with the pieces, almost omakase style. At any time you can add to your order verbally with the polite wait staff or with your chef directly.

The fish is fresh, great quality, and handled professionally. The rice is warm and seasoned well, with a fluffy texture. No mushiness or unevenness in the cook. Since the fishes and rice were seasoned and paired well with respective elements, I basically did not need to use any soy sauce.
All fishes were the right texture, the chuutoro and salmon belly were fatty and melt in your mouth, the aji and yellowtail/hamachi were delicate but slightly meaty, the amaebi, scallop, and ika were sweet with a hint of the sea, and with the slippery sensation they should have without being "slimy". Their ankimo was creamy, shrimp tempura was crispy, and I thoroughly enjoyed the crispy yamaimo hand roll as well. Yamaimo is usually known for being slimy, but is fried so it is crispy and retains its slightly earthy flavor, it is paired with a shiso leaf and I believe they also add some sort of Sakura sauce or plum sauce to give it some acidity, the full hand roll is a delightfully savory and tangy bite.
If you enjoy treating yourself and enjoy uni, I would also highly recommend it here as they have multiple levels of quality to offer. If you enjoy gunkan or aren't afraid of egg yolk, I also highly recommend the "uni plus 1 ".
Definitely a pricier option for food, but definitely worth it for sushi lovers. I felt that the prices were quite reasonable based on the quality of the pieces compared to other upsale sushi places.

Way back in 1982 I went to Japan as a college exchange student. This place transported me back 42 years to my first time in a handroll bar in Hitachi City. These chefs know what they are doing. The fish buyer makes excellent choices. The wait staff offer top tier service. It is definitely worth the wait. And they offer a great value if you know how to eat real sushi without expecting an all-you-can-eat buffet. We will definitely be back.

Fish was fresh. One salmon handroll, and one piece each of yellowtail and bluefin sushi, no drinks, $28. They have limited seating and I was rushed through my meal. I had to pay $9 for parking even though the sign indicated that my parking ticket could be validated by a merchant. Also, the sushi chef working in front of me would put a scoop of wasabi on the back of his ungloved bare hand, and then take a piece of it with chopsticks and put it on the sushi, which was somewhat disturbing.

This restaurant literally does everything right. The quality and attention to detail at Hatsuyuki eclipse every other establishment I’ve ever eaten at in the metroplex. It’s the first time I’ve ever walked out of a restaurant and thought “we don’t deserve this place”.

I think the bad reviews, which are few and faaaarrr between, are from people who are coming here with the wrong expectations. This isn’t an Uchi or a Shinsei where you have a birthday party and tons of drinks. You don’t come here to order a “ham and eggs roll” or a smoking martini. You come here for LEGIT, FRESH and EXPERTLY MADE SUSHI. I guarantee you if you are a lifelong DFW resident you have never had sushi this good before.

I can’t help but eye roll every time I eat here; the sushi is SO GOOD and FRESH! My husband and I go all out when we eat here, and we try nearly all the fish on the ‘available today’ board. Today our favorites were the scallop with chop toro topping, anything salmon, and the kanpachi with cherry blossom. Although these were the top today, every bite we ordered was out of this world. The salmon here is incredibly buttery and smooth. Unbelievable. And the rice they use is unlike any other you’ve had at a sushi restaurant. If you’ve never been here before, they do not serve rolls with sugary sauces - this is a legitimate hand roll bar with sashimi and nigiri pieces. You come for the true flavors of the fish. That being said, the fish isn’t like anything you’ve had before. It’s so fresh and pure. I LOVE Hatsuyuki and I hope they never leave Fort Worth! Thank you Yuki, as always, and today Albert!

Everything we tried was good - salmon belly, blue fin chutorro, scallop with chopped Toro, and the 5 hand roll.

A lot of flies in the store. A lot. Also, when leaving and going to my car, I was welcomed with a nice parking citation. Parking was validated by the store, but I still got a violation....

We were really excited to try this spot out, visiting from Austin so we didn’t realize things like “you need to arrive at 430 if you want to be on the list or wait an hour”. Either way we got in queue about 5 mins before 5pm and the rude host (older guy) was taking names and then walked in without grabbing us so I went in to just check if I could be added he immediately goes into “we’re not open out we’re not open” while I tried to kindly explain we were in line and just wanted to be on the list and it seemed like he may have missed our party. He didn’t seem to care so I chalked it up as a “is what it is”. Then went back to the queue.

When they doors opened and they came back out to get names he looked at me and said “no more spots” but the sushi chef helping him take names said the exact opposite. He was very friendly and let us know it would be an hour and took our info.

Appreciate the kinder chef that came out but we decided after waiting about 10mins it just wasn’t worth our patronage.

Service is just as important as your food and you shouldn’t have a host treating customers like dirt. Don’t mind waiting if it’s done with respect for our time.

Don’t recommend based on the service. There are plenty of sushi spots around that provide a better experience and roll.

If you’re serious about sushi and looking for one of the best spots in Texas, look no further than Hatsuyuki Handroll Bar. This gem has cemented its place in my top 3 sushi experiences statewide. And trust me, that’s not something I say lightly.

First things first, Chef Jun Mo Yeon is an absolute rockstar. His precision, creativity, and dedication to serving up the freshest and finest ingredients truly elevate the entire experience. Each visit feels like a personal performance, with him curating every bite to perfection.

The Shima Aji (Striped Jack) is an absolute standout. The texture is silky smooth, and the flavor is so clean and fresh—it’s as if the ocean kissed your taste buds. It’s delicate, yet rich with subtle layers that unfold with every bite.

Next, the Ama-Ebi (Spotted Prawn) is a revelation. You can taste the sweetness of the prawn, which just melts in your mouth. The slight briny note combined with Chef Jun’s masterful handling creates something absolutely magical.

The Hamachili—a fresh twist on the classic yellowtail—is another must-have. The balance of citrusy heat and buttery hamachi is simply sublime, a dish that will have you coming back for seconds (and thirds).

Finally, the Hokkaido Scallop is a star of its own. These are some of the sweetest, plumpest scallops you’ll find, and Chef Jun's attention to detail in their preparation lets their natural flavor shine through. It’s tender, luxurious, and almost decadent.

As a quick tip, I highly recommend arriving early. Hatsuyuki has limited seating, and it fills up fast, especially if you’re with a larger group. When I’m solo, I usually get seated quickly without any issues. But if you’re rolling with a crew, be prepared to wait—it’s absolutely worth it.

In short, Hatsuyuki Handroll Bar is not just a sushi spot; it’s an experience. If you're a sushi lover, this place is a must. Chef Jun Mo Yeon and his team will leave you savoring every bite, and you'll find yourself planning your next visit before you even leave!

*note they don’t seat larger than 10 people and it’s because there is only like 20 ish seats at the bar. You need to get here early so plan accordingly and don’t arrive super hungry bc you will likely have to wait awhile - wait for 2 at 515 was ~45 minutes. They do also do take out!

This place was amazing. The food and options were abundant and the experience was unique and fun. I will say, I don’t recommend coming here as a big group because you likely won’t be sat together and you really can’t converse because of the way you’re seated - that is unless you get lucky and get the corner of the bar seating. There are tons of regulars in there and you can tell by the way the staff greets them, it’s very genuine and welcoming. We were slightly overwhelmed by the menu so we just asked said regulars what they recommended and everything they told the chef to make was amazing. They said they pretty much just tell the chef to make whatever and don’t break the bank haha! Definitely an experience and amazingly fresh fish. It can get expensive quickly, but definitely worth it for a special occasion. Whatever this quail egg roll was, was delicious. No idea what was in it and I’m not sure I want to, but the flavors were INSANE. Absolutely worth trying.

Only recommendation would be for them to wait a second before shoving you out the door once you pay. We were in the process of paying and I still had 1/2 a beer left. They were immediately reaching around us clearing out our space and placing new seat settings, prepping to turn the seat which I understand to some degree, but also I wasn’t planning on chugging my beer because I felt pressure to leave.

I almost want to avoid leaving this review just so my favorite sushi place isn't mobbed at all times, but it will happen regardless, so here goes.

This is not your standard sushi place. Each piece of sushi runs ~$5 for a piece of fish on rice. Now I realize I'm not really selling it so far, but bear with me. The fish is flow in from Japan every few days, and when you sit down to eat, a sushi chef makes it on front of you while you watch. And it is HEAVENLY.

Each trip for me and my lady is expensive, but such a treat we will always return. The food is phenomenal. A few pieces of sushi haven't been what I'd call my favorite, but the vast majority is so delicious you will crave it for the rest of your life. The Gindara and the Akami Zuke are the most delicious things I've ever tasted in my life, and I'm a foodie!

We had a minor problem with our waitress last time putting in orders that were incorrect, but that's one out of five perfect visits.

This is, and will remain, my all time favorite restaurant until the end of time. If you like sushi, this is a must go.

The FRESHEST fish you will ever get! We were told that a lot of their fish are imported straight from Japan and y’all the quality is there!

We were not disappointed in absolutely anything we ordered. Everything was beautifully prepared and it was nice to have them make the hand rolls as you go, so the seaweed is still nice and crisp, and it’s not just sitting there.

We got the 5 Hand Roll Combo which comes 5 of the freshest hand rolls I have ever had! These included:

- Yellow Tail which is my absolute favorite kind of fish for sushi.
- Bay Scallop which would usually be my least favorite, but I promise y’all that this was so good.
- Crab and this was so creamy and melts in your mouth.
- Lobster, although I typically love lobster, I wasn’t too fond of it here. It was meaty, but I liked the other more than this one.
- Salmon, my second favorite fish for sushi, and once again so fresh and gobbled this up within seconds.

We also got other things off the menu which were the Salmon with Truffle Ponzu and I absolutely loved this! We also ordered a couple of the Spicy Tuna Hand Rolls and my husband loved these, while I usually am not fond of the spicy tuna mainly because it’s usually chopped up really fine and it’s just a texture thing that I can’t get past, this will be the ONLY spicy tuna I will ever eat! It’s cubed up and quite delicious! We added the Toro Hand Roll as well, which I wasn’t too fond of because it was chopped up… but the fish itself was good.

This was quite a treat for us since we can’t get this anywhere in Corpus Christi, but well worth every penny we spent! The service was great and we were well taken care of!

I can’t wait to come back next time we’re back in town!

It was my first time there and I just ordered the 4 hand rolls combo, edamame, miso, and Mexican coke -- I'm blown away! I even ordered a shrimp katsu hand roll because everything else was so good!!

I normally don't get the raw stuff unless it's high quality because I worry about food poisoning, and this definitely counts! Super fresh!

I definitely want to come back here again and I want to try out the specials next time!! I also really dig the izakaya vibe to it.

Hatsuyuki can do no wrong in my book. Having been here over 10 times, it is my favorite restaurant in all of Fort Worth. Every visit I get the 5 Hand-rolls option and additional items on the menu board. The Kanpachili continues to be my recommendation to any one who asks what to get. It has the perfect amount of spice and the texture of the fish with the pear make for the most delicious bite. I have tried the salmon sashimi with both the truffle ponzu sauce and mustard sauce. You cannot go wrong with either, but the truffle ponzu is worth getting at least once. If you are coming by yourself, there is usually a seat available, but if you come with 2 or more people, expect a wait because it is also the favorite restaurant of many others. Trust me, it is worth every minute.

I came here because of the post that said best sushi outside of Japan.
Probably the best quality I have had in the States and continental Europe.

Expect to wait; the wait is worth it.
Anyone that complains about the wait doesn’t know what good food is.

The simplicity paired with the quality ingredients and technique will always beat the restaurants that try to do something inventive.

This place has literally ruined me from eating sushi anywhere else besides here. I’ve eaten at other places after eating here and it’s been very unsatisfying and made me want to vomit sometimes. I finally came back recently and found out this place was the cure to my sushi craving and the only place I can go to for high quality, delicious, and scrumptious sushi. The customer service and staffs are always kind, attentive, and assertive. We’ve been here 4-5 times and each time has always been a great experience.

Also, we took our 6 year old daughter whom loves sushi this one time and it was beyond amazing. Our sushi chef was so attentive and patient. Our daughter kept up with the pace but I noticed how patient he was to ensure she finishes each dish to serve the next in a timely manner.

Very disappointed in this place. Their hand rolls were basic and uninteresting. They charge way too much for sake. We ordered four hand rolls and only got three. When I tried talking to them about it they argued. I wouldn’t waste my money here.

Food is good, but after $26, I feel like I should have started getting full. I was more hungry when I left than when I arrived. I can understand fresh fish, flown in the same day and all of that, but it would have cost probably $100 to get full there with those tiny portions. Prices are very high.
Also, the seating is a bit cramped. Very small establishment.

Sorry, but if you want a full sushi experience this is not it. It truly is an exclusively hand roll place and the menu feels "covid" limited. Lol! We left because of the lack of variety and no sushi. It may be fine if hand rolls are your thing.

Amazing dining experience in this hidden little gem of a sushi restaurant! You’re sat in a way where you can see all the delicious sushi being made by the chefs, whom can converse with you and you can also give direct and immediate feedback. Everything we had this day was fresh and delicious. Our waiter was friendly and was able to help us with the order in a quick and timely manner. They were out of oysters on this day but we’ll have to make it back there to try the oysters as well. Highly recommend this restaurant, one of our new favorite.

The Tuna tasted as fresh as the Tuna I had on Kauai or Maui. I'm seriously impressed.

What a surprise to find a hand roll bar in Fort Worth! We went on a Friday for a late lunch and waited for about 10 mins. We ordered a good variety of hand rolls and really enjoyed everything I had. Don't forget to check out the daily specials board to the left of the kitchen!

Review №164

Edit: my boyfriend got severe food poisoning from the sushi so he paid $420 to still be hungry and for bad food poisoning. Docking an extra star for that.
To start my boyfriend and I got the omakase and the food was great. Our bill came out to $420 for one bottle of sake ($27) one glass of wine and omakase plus 3 courses each. So it’s definitely not cheap. Our issue with Hatsuyuki was after standing outside for 45 minutes waiting so we could get a spot at 5, we got in and there’s people in shorts and backwards hats and kids wearing overalls and people wandering around with large groups. There’s no regulation of who gets in or how people act so it’s basically a zoo. The fish was good it’s undeniable but it was loud and boisterous and very expensive. With these prices service should be superb and there should be some type of class but no. If you want a nice date night this isn’t it but for good expensive sushi this is your place!

We loved it. It was not our usual sushi experience, having them preparing the rolls right in front of us. The bay scallop roll was amazing as well as the salmon and yellowfin roll. Oysters were small but tasty. Make sure you check the time. We got there with fifteen minutes left to order, but they didn’t seem put out at all. Price was very reasonable

I am changing my review... service is important and I drove to this place for lunch... I got here at 2:14, by myself..........They refuse to serve me. They said last call was at 2:10. I said could they asked the manager and make an exception because it doesn't make sense... The sign on the door and the listing said they were open..... Then another waitress came back and said no sir you have to be here before 2:15... And I was. They were rude, and entitled. Their food is absolutely amazing I will give them that, but as a patron I was heartbroken that I wasn't heard or listened to. No one could explain to me why all the signs and listings had them open but yet they would not serve me. I've always heard of last calls at bars...... But I've never heard of a last call at a restaurant, where you were there before they closed.

am born and raised in Fort Worth and this sushi handroll concept is great. Definitely go with one of the options to get multiple rolls. The seaweed wrap on the hand roll reminds me of Korean friends cooking. I would suggest this place for a dinner as well as lunch. It is a quick 15 lunch that is healthy and filling. I liked all 4 rolls I tried, and I do not think you will go wrong with anything.

I've been going to Hatsukiya for more than ten years, and even as frequently as multiple times a week. But at my recent birthday dinner, there was so much drama because of the staff. Previously, Tony treated us very well, and we had the best time with him!

The guy in charge of seating, Francisco, messed up big time. He skipped over four people who waited over an hour to seated. (I overheard they were his friends). Did Francisco forget he just called my phone to tell me that our table was ready? We were waiting in the car because Francisco made my friend anxious when he explained about the new parking app and towing in the area. My friend already wanted to leave but since I loved this restaurant so much, he kindly confronting him about his error. Francisco still didn’t make it right. We tried to be accommodating by offering to sit outside, but he was saying he couldn’t sit us three where there were four chairs because he gave it away to two couples. yet there was a couple they skipped over and We had seen people pull up a chair when there was a table for 2. (There were 3 of us). The hostess has no regard that customers commute across town and arrange childcare to have a nice meal to be ruined by this behavior. Finally, Tom did make something work when the following table became available. Be prepared to wait to endure this type of dismissive, disrespectful behavior if you encounter him.

I thought things would get better, but Tom was so rude to my friend. It was my friend's very first time to dined here. He asked the manager a simple, legitimate question, “Why weren't the chefs wearing gloves?” Its important to note that hes a physician in his country who recently recovered from a severe episode of food poisoning. I was expecting Tom to give him little knowledge about Japanese culture, but instead, he brashly told him a few times, “I don’t know; if you don’t like it then eat somewhere else.” My friend lost his appetite, but he stayed because it was my birthday. Some service improved from 9 pm to 10 pm, and we had been there around 6 pm don’t expect to get seated until 8 pm. The food is fresh, which is why this place is so popular. My friend told me he was never returning again. i hope the owners can correct this before it begins to tarnish their reputation
