Why just one??
Had the privilege of dining with Charlie and his team on the last night of their first full year. What they achieved in that first year is rare. Extremely rare. They were awarded a Michelin Star in their first year. We were offered a complimentary cocktail upon checking in as we waited to be escorted to the dining room. After we were greeted by the team, Charlie presented us with the first of 22 courses. I can't decide which one was my favorite. Each one had it's own personality but I can say that every bite was a masterpiece. I've never been a fan of sea urchin but I changed my mind tonight. My favorite parts of the evening was when the team accommodated my neighbor who wasn't as adventurous as me. They seamlessly went off script and presented a dining experience with panache that turned her into a new fan to sushi. It was so much fun to see her nod and smile after trying something new that was slightly different from everyone else. But she never felt singled out in a negative way. So I gotta ask... why just 1 star? Having dined across the globe with other Michelin recipients, I look forward to dining here again and following their ascension.

I have now had the pleasure of going to Craft twice and both times were absolutely incredible. The service is outstanding from the moment you walk in. Every dish was unique and beyond delicious. The flavor on even the more classic style dishes was just next level. It was also amazing to get to watch it all being prepared and to see the care and attention to detail put into the meal. Everyone at Craft is so clearly passionate about what they do. I really enjoyed getting to interact with them as they walked us through each dish and wine pairing.

Had dinner here last night and we are still blown away by the whole experience. Tim and Nguyen really went above and beyond, we feel so lucky to have been able to spend this time with them.
Every bite was so interesting and tasty. The Sake pairings really elevated the dishes. The service from the whole culinary team was excellent, especially from Tim and Nguyen who made our night one to remember. Definitely will be back because there’s no way Craft Omakase can be topped.

But what really made the evening unforgettable was the extra touch they added to celebrate her birthday. After an incredible series of courses, the staff surprised us with a beautifully plated dessert, complete with a birthday message. It was a small gesture, but it made all the difference.

Came here for my husbands and I’s first Omakase experience and it did not disappoint!! We were the first to arrive and was greeted by the friendliest most welcoming staff. Once we were seated, our Chef Charlie did a phenomenal job interacting with us as well as educating us about the overall Omakase experience. We absolutely loved our dinner there. 11/10 would highly recommend!

This is the best sushi meal I’ve ever had in my life. The service standard is a 10 out of 10. The quality of the fish and dishes is simply superb. Meat is so well sourced and also aged for the richest and most depth flavors of sushi. And truly the 22 course meal fills your belly and leaves you so content. This place deserves a Michelin star rating. It’s truly the best meal I’ve had in Austin. And I highly recommend it for a special occasion.

We had a wonderful experience at Craft Omakase. The twelve seat setting is intimate and comfortable. The experience started with an intro to the staff and then each course was explained throughout the meal. They specialize in dry-aged fish which adds more flavor to many of the nigiri portions. It's well worth the $$$ and we'll definitely be going back.

Sushi is by far my favorite meal, and Craft Omakase is by far my favorite experience. I've been to just about every omakase in Austin, and a few notable Michelin Star spots internationally. We visited Craft with high expectations, but unfortunately, my experience was a letdown. From the start, we were asked to wait outside in the sweltering heat for 15 minutes before being seated. This was not an ideal way to begin an omakase experience.
Once seated, I was looking forward to interacting with the chef, but unfortunately, our chef seemed disinterested and unengaged. The interactions felt forced and lacking in warmth, which detracted from the overall experience.
But the biggest disappointment was the food itself. As an omakase restaurant, I expected to be wowed by the chef's selection, but the dishes were uninspired and lacked finesse. The flavors were muted, and the presentation was unremarkable.
For the price point, I expected a much more impressive experience. Unfortunately, Craft failed to deliver. Unless they revamp their service and culinary approach, I would not recommend this restaurant to others and definitely do not see how this was awarded a Michelin star.

It’s hard to live up to the hype of online contentorrhea. I heard high praise for Craft Omakase before and after Michelin made it that much more difficult to get a spot. Nearly every single dish exceeded our expectations. The simplest of the courses, lean bluefin with wasabi and soy (of course, not simply prepared), was my favorite, showcasing the care of the preparation of each ingredient, the combination thereof being superlative. The kindness, memory, and attentiveness of the people working here balanced out the discomfort of sitting next to far more privileged people (as their demeanor and discussions indicated) as this night out was singular for us. The one thing we found was not suited to us was the final course of dessert. Considering the extravagance of the two preceding courses, dessert was nearly unappetizing. We, of course, finished it and will pay it no heed in future thinking of this night. Thank you to everyone for your hard work and time spent honing your craft.

When God visits Austin, he prays to Himself for there to be an opening at Craft. It's Craft that Jiro's actually dreaming of. Minecraft is considering changing their name so no one accuses them of stealing the name. Michelin decided to start rating Texas restaurants only after Craft opened. Fish believe heaven is having the honor of being served at Craft.

Great, but then petered out a bit.
Charlie and Nguyen were really low-key and demure about the innovation and thought put into a super modern omakase. Yet they were really friendly and didn’t cringe at all entertaining conversations from guests about real wasabi or whether or not Michelin the tire company should be awarding restaurants.
What I wanted to chat with Mr Nguyen and Mr Wang about were three things in particular: 1a) The coursing was straight up cerebral. The white fish/scallop served one after another was challenging, but when I realized what was going on, so rewarding. It was the final white fish of 4-day aged Jeju Hirame that hit it home. It was the first going in the meal that they served something from their aged locker and exclaimed the point of the aging. It was an experience, the room went totally silent. The same thing happened with the Mackerels and the Bluefins, with the Toro aged a mindboggling two weeks. 2) The pivots in the coursing were heaven-sent, from the Aguachile to the Hamachi and Grapes, to the Daikon, to the (wow!) cooked trout. They were all blessedly hydrating, creamy/comforting, and crucially sweet to break up the sushi. The oyster in particular is something I’ll always remember. So many forgettable mignonettes on raw oysters elsewhere—this one actually had a point. Without any mayo or fat at all, it tasted like the first time I realized I liked tartare sauce. Ratatouille moment for me. It’s to be experienced. 3) The aging of the fish here seemed completely lost on reviewers (including professional reviews) but it is a brand new technology that is extremely difficult to pull off at all, let alone well. The lean Bluefin akami alone was eminently brown like jerky, never seen anything like it but was silky buttery, and of course delicious like everything else too. The other tunas were completely falling apart, with no fishiness or any off flavor besides a savoriness completely new and surprising. That totally floored me. The Mackerels knew their gingers, vinegars, and their homemade Laoganma, so they knew just where to add back piquant and sourness.
Place for improvement before a shoutout: the service towards the end of the meal put a lot of people off. Whether it was part of the theatrics of the service (we hate to say goodbye) or that they were falling behind schedule, it was a mess. No time for conversation, not very many or genuine thank yous for coming, no time for people to actually order their Ports, grab their jackets, savor what just happened, or do anything at all that normal people do to wind down an experience.
Even Tim didn’t have time to do his thing, which is impossible because he is giving top-notch service at superhuman speed all throughout. He was a highlight in service, and I want to say he is irreplaceable at Craft if only to balance out the vibes. To Tim I wanted to say bye, thank you, because he was so excellent but we were too rushed out the door. Julianna too I wanted to say a quick thanks to for communications beforehand, but they were beyond overwhelmed at the end. The restaurnant was not to my knowledge bogged down by any bad surprises, which makes me think this is a structural problem and it’s probably unreasonably tough on the peripheral staff right now.
Overall, it is completely surprising that Craft’s level of innovation is happening in Central Texas. But because it is happening here, the conversation from behind the counter can veer into being informal almost too much so, almost crass, to suit the clientele. Yet I think most people will be fine with that.
Mr Wang and Mr Nguyen have however parlayed an imperfect stagiaire-ing at Uchi (because Uchi isn’t at all on the same level), into something that would be a jewel in New York, London, Hong Kong. Without a doubt that is happening in their cuisine.
I wish sincerely that as they grow physically and grow their prices inevitably that they expand their expertise in timing, service/conversation, and even in the innovation that has brought them this far. I know they’ll do it.

While I was overly hesitant to commit to the cost of the meal, this will go down as one of the most memorable meals in my life thus far. The carefully constructed menu has each piece and dish carefully overlapping the next in order to create a smooth gradient reaching across the vast flavor spectrum of Japanese cuisine.
I couldn’t pin point a single “least favorite” course from the menu. This was comparable to an adrenaline junky going to a thrill park full of top-tier rollercoasters where every track is delicately crafted to wow the rider and leave you begging for a second go-round. Just like a thrill ride, you are dropped at the exit of each course seeing the reassurance and confirmation from the stranger next to you about just how outstanding the last bite was.
The last thrill from this ride is leaving the restaurant and listening to the beaming and resting words of each guest saying “Omg, Wow. Wow. Wtf. Wow…”

A++ experience. Every single bite was outstanding, but in particular the kanpachi and shima aji were all particularly delicious for me. The staff do a great job of giving each party a personalized experience while dining with the full group of 12.
What sets Craft apart from other omakase restaurants is not just the attention to detail of each dish, the elevated simplicity, or execution - it's the non-sushi dishes. On this occasion it was chawanmushi and shrimp aguachile with leche de tigre; in the summer, a beautifully composed compressed watermelon dish was memorable.
Come to Craft to celebrate a special occasion or just because you want an incredible meal you will never forget. They will surprise and delight you every time, and you won't regret it. The Michelin star is very well deserved.

Amazing 22 course meal! Each individual bite was unique and special in its own way. Highlights were the tartare, fatty tuna, crudo with tigers milk...but really, everything was phenomenal.
The staff is incredible and the atmosphere was fun and light. You are sitting at a communal table situated around where the chefs are preparing your dishes; therefore, if you are an introvert that doesn't want to talk to neighbors, this may not be the place for you or you can ask to be placed in one of the two corner spots during your online reservation request.
Memorable meal, my wife and I will definitely make our way back at some point!

To start with, one of the better service experiences I’ve had. The team was very thoughtful, engaged and did an awesome job of moving at a pace that made sense. Their team embraced conversation and getting people involved in the experience. The quality of fish was incredible, things like never freezing their scallops stuck out as several other omakases in town do has been my experience. Did the Reserve sake pairing which was $100 add on and was worth it in my opinion. 4 glasses split across the meal and selected with the progression of taste in the menu in mind. Would go again and would recommend to anyone who asked me.

It's a near perfect omakase experience. Seriously. The one drawback is that they're VERY busy. Especially on the days when they have three separate services. The rush to get their 19 dishes to you, consumed and a new group seated is felt in how you don't have time to consider one dish before the next one (or two) is immediately put upon you.

I wanted to give my mother a birthday gift of something she had never experienced before, so omakase was one of the first things that came to mind. When I saw Chef Charlie was at the helm at Craft it sealed the deal; after wondered meals in years past at Uchiko I knew he would not disappoint. 22 courses of perfect bites. High quality ingredients, handled with the utmost care and precision, to craft exquisite taste and mouthfeel. I’m not sure there was a course I didn’t smile after eating. They took great pride in ensuring dietary restrictions were met, cups were always full, and questions were answered. Service was impeccable, and the staff were incredibly welcoming. The chefs were all so willing to answer any questions, and the intimate serving area made it feel like everyone around us became friends as we ate, like we were all in on a joyful secret. This has been one of the most genuine omakase experiences we have had in town. Chef Charlie and company really take the time and intention to showcase the fishes and ingredients. Other omakases in town tend to focus too much on the sauces/extras and it ends up ruining the core identity of what patrons are eating, which should be always be sushi. This was one of the best dinner experiences I've had anywhere. From the welcoming we received at arrival to the final goodbye, the crew at Craft Omakase was the best. The food was phenomenal. Omakase with a focus on nigiris. Every bite and sip I had at Craft was excellent. Shout out to Tim and Julianna for the wonderful sake pairing. A few of my favorite bites were the uni with ikura nigiri, masaba - mackerel with the ginger garlic sauce that reminds me of Hainan chicken rice, and gai lan (Chinese brocoli).

What a great restaurant! I feel the price point, while high, is definitely worth it. The atmosphere is great. Being able to try all the tastings with the chefs who prepared them in front of you makes it feel even more special/personal. All the chefs and staff were very friendly, and they answered any questions we had about the dishes we were served. This isn't a place you would go to every weekend, but for a special occasion, you should definitely check it out. It's an experience you won't soon forget!
They are very accommodating to special requests and dietary restrictions. Once you book your reservation you will receive a questionnaire to complete for your party. Here you can make special requests and list dietary restrictions, which I found to be incredibly helpful. There are also wine and sake pairings to go along with the meal. I took the wine pairing, and I thought all the wines were great, but the price point, $80 for 4 glasses, was a bit high I thought. Next time I go back I would probably just do a bottle or individual glasses. There is also a complimentary cocktail included in the price of the meal that you get before dinner. It was very good as well!

Wow. I've eaten all over (49 countries and counting!) and I am sure this was one of the best meals of my life. I KNOW it was the best sushi of my life (in fact at least 4 of the pieces were "Omg that was the best sush of my life...lol). Don't sleep on the sake flight: pricey but beautifully curated. What a place.

Truly exceptional food and service, with flavors just inventive enough that each piece of fish was interesting and distinct without going down the Sushi Bar “here’s a mountain of expensive toppings with some fish under there” path.

This was my second visit to Craft Omakase and WOW! From the moment you step in the door, you know this place is special! We received a warm welcome and a delicious welcome cocktail from Tim, who is one of the owners. We were ushered into the dining room and greeted by Nguyen and Charlie, the Sushi Chefs and owners. The service was impeccable and the food is so good, I find it impossible to describe in enough detail todo it justice. Don’t miss this Austin gem- there are Omakase restaurants all over Austin but CRAFT feels like a cut above!!

Came here for my husbands and I’s first Omakase experience and it did not disappoint!! We were the first to arrive and was greeted by the friendliest most welcoming staff. Once we were seated, our Chef Charlie did a phenomenal job interacting with us as well as educating us about the overall Omakase experience. We absolutely loved our dinner there. 11/10 would highly recommend!

Expertly executed, high-quality but non-stuffy omakase experience in Austin. You're greeted in an ante-room/lounge area where you check in and are given your choice of complimentary alcoholic or non-alcoholic cocktail. Once everyone is there, you're guided to the dining area which is counter style seating that surrounds Chefs Charlie and Nguyen. This is definitely a more traditional omakase, with most of the courses being nigiri, with a couple of composed dishes sprinkled in. Everything from start to finish was excellent. The quality of the fish was impeccable, but the standout to me was actually the sushi rice (which for those in the know is what sushi is REALLY about). Perhaps the best sushi rice I've ever had...cooked perfectly with an excellent texture and flavor. The perfect base for the high quality fish that sits on top of it.
The service from arrival to completion was impeccable. All of the staff here are true professionals. I also liked that the atmosphere was convivial and casual. The chefs are happy to chat with you while they're making your food and were very open to questions and small talk.

This was my first Omakase experience. It was a splurge for my birthday and I absolutely loved the experience.
The atmosphere was was very cozy and inviting, I loved the lounge area and complimentary drink prior to dinner to settle in.
I was a little worried about this splurge and feeling disappointed with flavors, but that was absolutely not the case here, each plate boomed with unique flavors.
I would definitely come back and recommend Craft to others!

This is the best sushi meal I’ve ever had in my life. The service standard is a 10 out of 10. The quality of the fish and dishes is simply superb. Meat is so well sourced and also aged for the richest and most depth flavors of sushi. And truly the 22 course meal fills your belly and leaves you so content. This place deserves a Michelin star rating. It’s truly the best meal I’ve had in Austin. And I highly recommend it for a special occasion.

STOP THE PRESSES! Let me tell you about this incredible dining experience I had at Craft Omakase. This place only has 12 exclusive seats, and you definitely need to book in advance. From the moment I walked in, I knew I was in for a treat. The service here is on another level. The front of house staff greets you by name and makes you feel like a VIP from the start. It's like they’ve known you forever, and they treat you with such warmth and professionalism.
The ambiance was perfect—modern yet cozy, with just the right touch of traditional Japanese elements. It felt like stepping into a culinary wonderland. I kicked things off with the ocean trout with wasabi, soy, and forikake. Oh man, the flavors were incredible. The fresh trout melted in my mouth, and the wasabi and soy combo was a flavor explosion. Next up was the crudo with grape, ume, and shiso. The mix of sweet grape, tart ume, and aromatic shiso was pure perfection. I could eat that every day and never get tired of it.
Now, let’s talk about the sake. Craft Omakase has some fantastic pairings that took the meal to another level. I started with the Harada Art of the Sensei Junmai Daiginjo, which was light and crisp, perfectly complementing the delicate flavors of the ocean trout and crudo.
Then came the sushi, and wow, just wow. The bafun uni from Hokkaido was a highlight—so creamy and briny, just divine. Paired with wasabi, soy, and ikura, it was an umami bomb in the best way possible. I enjoyed this with the Joto 72 Clocks Daiginjo, a sake that was smooth and slightly fruity, balancing the richness of the uni beautifully. The bluefin chu toro was another standout. The fatty tuna, paired with soy and truffle, was next-level delicious. And the bluefin otoro, topped with caviar, was pure luxury on a plate. The bluefin tuna here is meticulously aged to perfection, enhancing its flavors and texture to an extraordinary level. This was paired with the Sasaichi Dan Junmai Ginjo, a sake with a subtle sweetness that enhanced the flavors of the fatty tuna and caviar.
Watching the chef at Craft Omakase was a treat in itself. The precision and care he put into each dish were amazing. You could feel his passion and dedication in every bite. I finished off with a refreshing coconut lime sorbet with pear granita, ginger, and yukari. It was the perfect ending to an incredible meal. The sorbet was light and tangy, and the yukari added a unique twist. I paired this with the Shichi Hon Yari Junmai Namazake, a lively and refreshing sake that was the perfect palate cleanser.
If you're looking for a dining experience that will blow your mind, you have to check out Craft Omakase. The flavors, the presentation, the sake pairings—everything was on point. This restaurant is absolutely deserving of a Michelin Star. It was an unforgettable night that I can't stop raving about. It was easily one of the best meals I've ever had, right up there with the legendary sushi at the infamous Bar Yasuda in Japan. If there ever was a reason to have a 6th star, this restaurant would make a solid argument. It is pricey, limited seating, and a little work to get into, but the effort is worth it. After having some amazing Omakase in Tokyo, I was excited to give this place a try, and it did not disappoint. A welcome staff, skilled sushi masters, and a relaxed atmosphere made this evening pretty magical.
22 courses of well balanced selections were served at just the right pace, and with a comfortable level of interaction (even for us introverts.) Drinks magically stayed full throughout the experience, with support staff providing expertise in the prepared dishes and sake/wine pairings. Overall, this was better than my Tokyo experiences, and possibly one of the best meals I've ever eaten. 6 stars. Can't wait to save up and do it again.

As a guest, you’d never guess that the culinary and service team working at Craft Omakase have had less than eight months working with one another under their belt. The service staff runs with expert efficiency. When I visited, I was experiencing an extreme bout of allergies and requested some tissues. Not only was I given them almost before I could finish asking, but my used tissues were disposed of immediately as I used them, without me even noticing until the meal ended. Additionally, I visited with my boyfriend, who doesn’t drink, but told our server Tim that he enjoyed tea. Tim gave him a small glass of a sweet green tea that my boyfriend raved about so much that the rest of our side of the counter asked for glasses for themselves. To touch on the communal nature of the meal, the comfortable atmosphere and arrangement of the seating at Craft encourages friendly conversation with those around you about life or, of course, the spectacular food.
Chefs Wang and Nguyen are clearly seasoned professionals. My boyfriend and I were amazed by how skilled they clearly were with molding the rice and cutting the fish, ultimately constructing delicious final products that weren’t over-garnished (only had toppings that enhanced flavor). My personal favorite was the chutoro. However, it wasn’t just the nigiri that impressed. The other dishes that came from back of house were fabulous as well, my favorite being the aguachile. The food also comes out at a great pace, which is important to me and really improves an experience. It’s especially fun to watch the chefs prepare the bites in front of you in anticipation.
I loved that everything was included in the price beforehand barring beverages, and I would definitely say that the price tag is worth the experience and great meal!
Craft Omakase has a promising road ahead of them in the Austin culinary scene, and I cannot wait to watch them experience it as a frequent guest.

Craft serves excellent sushi. All of the fish courses during my seating were fresh, skillfully cut, buttery, and topped with flavorful garnishes. The in-house dry-aged and cold-smoked pieces were excellent. Toppings and flavors are accessible, which made the meal successful, but I also would have loved to try something new and unexpected. The rice is warm and packed loosely, not too sweet. There are no supplement options. (Hallelujah!)
Craft’s claim to fame is that 3 members of its small team are long-time veterans of nearby Uchiko. Two were head sushi chefs. So they know fish and flavor well, especially in the plated dishes, and I presume they have good relationships with suppliers. Although the “craft” of Uchiko’s kitchen is in their DNA, I think the other elements of fine dining are in development. Service was rushed: 22 courses were served assembly line style to a packed counter of 16-18 diners within 90 minutes. I was still actively chewing and enjoying nigiri while the next in sequence was plated, accompanied by insistence that we eat without delay. The remodeled Steeping Room (they use their teas!) has been transformed into a more upscale space, but the dining area itself feels like a Marriott conference center lobby with generic artwork and broad ceiling lights that stung my eyes. Some pendant lights or spotlights would have made the counter more intimate.
After service and tax, Craft’s omakase is $227. At this price point, I expected a more memorable experience and a bit more bespoke storytelling, with slower service. But I suppose that’s not what Craft is going for. It’s well-Crafted sushi, not showbiz. I’d be glad to eat it again.

I've been here twice now and love this place. No joke, I've been to every single omakase in Austin and this place is a top 3 omakase for me. They are more "traditional" in their sushi. Don't expect crazy sauces or lots of soy sauce. Expect for you to be able to taste the rice, the fish and little garnishes they add every now and then. That to me is sushi at its finest. Some fish are fresh, some are cured and I like their mix of dishes. 22 courses sounds a lot but everyone I've taken there has been able to finish it. You definitely won't leave hungry!

I tried Craft for the first time, and it was quite the experience. The 22 courses they served us were inspired and beautifully prepared. Some of my favorites included the bluefin tuna tartare on a nori chip, the bafun uni (sea urchin) that tasted like the ocean, the chu toro and bluefin otoro which were perfection, the winter vegetables in a slurp-worthy broth, and the oyster that was equally slurp-worthy. I really loved the temperature and quality of their sushi rice and the creative way they layered ingredients, most of which I cannot pronounce, but all of which I thoroughly enjoyed.
The restaurant was intimate with only 12 seats, and the interior design and architectural touches were beautiful as well. I’m not getting any younger, and I found I could enjoy the meal and a conversation without having to shout or strain.
The chefs timed the meal well, so you are never waiting too long for the next culinary delight, nor do you feel overwhelmed or rushed by the pace. All of the chefs clearly love what they do, and shout out to Chef Charlie and team who answered all of our questions and made some truly transcendental food.

I have done almost all the Omakase's in Austin, and the sushi places and this one ranks near the top, if not the top. 22 courses were a filling meal, the oyster and tuna tartare to start were exceptional. The nigiri was great. Nothing over the top, no burning bone marrow on your fish, no truffles all draped over the piece, just great fish, done with great technique. The winter vegetable dish is a Michelin star dish (best bite I have had in a couple of years) and blew me away. No add on pieces which I like, price was good. My go to Omakase spot

Had a fantastic time here last night, absolutely top 3 best Omakase’s in ATX. Chefs and waitstaff are friendly, knowledgable, and engaging. There was tons of food and every bite was spectacular- some of the best fatty/savory bites of fish that we have ever had.
If you compare it with somewhere like Otoko (admittedly our all time favorite) it’s right up there in terms of quality, deliciousness, and experience. You get a big bang for your buck here, super fairly priced for an Omakase of this size and scale.
Will ABSOLUTELY be back. Five stars without question. My only criticism (and it’s not a big deal in any way) would be that the cocktail list is short. Expanding on the drink offerings/bar capabilities would add to the experience.

Truly an incredible experience all around. I could go on forever, but there were so many delightful courses on this menu, and the progression of dishes was so expertly thought out. One of my favorite unexpected takeaways from the night was being so graciously entertained by the amazing chefs and serve staff. They wittingly answered every silly question we had and totally matched the energy in the room. I felt so at ease and loved by the end! Didn’t even take my phone in so I have no photo evidence, but it was the best night with the best food.

Fabulous sushi done correctly. Temperature of the sushi and the rice was perfect. Something most restaurants get all wrong. The quality of the fish was outstanding.

Went here to celebrate a couple things between my boyfriend and I (bday, Valentine’s Day, closing on a couple houses). I was so excited because I LOVE Uchiko(happy to see Tim as co-founder, so nice and attentive !), Uchi, and obviously been to Uchiba. We had a great time! Everything is so well thought out. (You eat with your hands so the bathroom soap is unscented !)The gentlemen sitting next to us used to work with the staff at Uchiko and said he’s been here multiple times so I knew I was in for a phenomenal meal. Charlie Wang, Nguyen Nguyen, David, beau, Samuel are the culinary experts there and served 22 dishes! There was a lot of blue fin dishes which happens to be my boyfriend’s favorite so we got lucky! Every dish was amazing but My fave ones were the tartare, aguachile, crudo. I was pleasantly surprised by the mizudako octopus , madai sea bream, sawara mackerel. And obviously dessert was fire :) we got a special card at the end ! Hoping to come back

Craft Omakase is 100/100!!! This was only my second omakase experience, but wow was it just beautiful! Surpassed my first experience and well worth the price point. From the very first smile greeting you, upon walking in, to the very end when they clear the counter top. Everyone was so nice. The engagement was light but very friendly. Chefs were very engaging and made sure everyone was comfortable. They made sure to explain every course and even explained about their dry aged pieces.
Lighting inside was lit enough so you can take pictures of your beautiful courses. Each course was well thought out and perfectly executed. Even their cocktails and mocktails were delicious! I ordered an Arnold Palmer knowing that it was just going to be deliciously different. And boy, was I right! It was delicious! Different, but delicious!
Chef Charlie was so gracious. He gave me a generous scoop of caviar. Chef Nguyen was so gracious as well. I joked (kinda) about taking my leftover ginger home and he came out w a jar and sent me home w it! Such an amazing experience! I will be back for sure! We were greeted to welcome drinks and then led to our counter seating where we met the chefs. The sushi was delicious, both high quality fish, well prepared and dressed to complement the flavor of the fish itself.

Complete full menu experience worth the steep price. 12 dishes for only 12 guests at a time. The menu is mixed between fish and vegetables moving toward fattier cut until desert. We liked it quite well, especially since we ended up sitting next to a close-minded couple we could talk with. Very much not for young children, it's date night or foodie experience. They sent an email a few days prior asking for allergies and will make some accommotions (but not fish or soy). Parking is easy in the shopping center.

The octopus and scallop nigiri may have ruined those for me elsewhere - I didn’t know the texture and flavor could be that good. The non-sushi bites in the 22-course meal are far from afterthoughts - the chawanmushi with mushroom duxelles and truffle is indulgent and rich yet light & velvety.
Service is stellar - friendly and warm and with an amazing eye for detail. Not overbearing or stuffy at all. Chef Wang noticed shortly after we sat down that my fiancé is left handed - so he flipped her sushi serving wood dish around so the ginger on it would be easier to grab. Little touches like that are what make Craft special.
Can’t wait to go back - need to book again soon before it becomes impossible!

Let’s keep this review short. If you like Otoko and Uchiko, you will want to reserve here. The passion exuded by not 1, but 2 former Uchiko Executive chefs, Charlie Wang & Nguyen^2 really shines through. 22 courses of exemplary flavor, complimentary welcome cocktail, best service this side of the planet. 12-13 seats is all, so this is a very elegant, sophisticated, & intimate experience. Would give it 10 stars if I could.

I would give them 4.75/5 stars overall!
Our favorites are the Madai, Kurodai, Muki Hotate (it is the best scallops we ever had), Bluefin Chu Toro, and Masaba… it was hard to choose one favorite 😅
The two items that missed the mark for us are the A5 Wagyu and the crudo. We just had better wagyu before that literally melted in your mouth. As for the crudo, it was a little fishy.
I love that everything was included in the price and they didn’t offer extra pieces at the end for extra $$$, it also was very filling at 22 pieces 😋🤤
They really nailed it with execution, quality, and service even at 2 weeks old.

What a pleasant experience. I felt like I was at home.
Tim greeted us with a smile and a complimentary welcome cocktail before our dinner, and we talked about life, more specifically his daughter who just turned 16. Tim’s presence will immediately put anyone at ease and welcomed based on his charisma alone.
The pieces curated by Chefs Charlie and Nguyen are well thought out, they’ve selected the fish that they love working with, enhanced it with dryaging processes and made it their own.
Chef Sam and David’s plated courses look simple, but the shiitake mushroom and the daikon reminded me a lot of popcorn. Such an insane bite.

Amazing omakase dinner experience! Arrive early and be treated with a welcome cocktail from Tim, who will also guide you thru sake or wine pairings if you choose. Charlie, Nguyen, and team take you on a 20+ course tasting where each small dish or piece of nigiri is taken to that next level that you didn't know was possible. The atmosphere is pretty laid back with customers having small conversations amongst themselves and with the culinary team, with pauses for explanation of each course.

Ive never had snapper so tasty in my life…. The team behind the counter of this Omakase is exceptional and you can tell by the finesse in their steps that they have been perfecting their craft for longer than I have been alive!

What an amazing dining experience! Craft Omakase is the epitome of an intimate, authentic and exclusive culinary journey.
Let’s start from the space itself. The minimalist, classy front cocktail room sets the stage for what’s to come: a meticulously curated 20-course tasting menu that promises an exceptional experience.
The skill, expertise and creativity exhibited by the chefs in preparing and presenting the dishes were nothing short of phenomenal. Beyond the flawless timing and portioning of every serving, the immersive view of the chefs at work create an atmosphere that showcases how much thought, care and dedication is poured into each delectable bite. The precision in slicing the fish for the nigiri and the balance of flavors of the hot and cold dishes absolutely showcased the team’s brilliance, and their passion and creativity absolutely shone through in the unique flavors they were able to create.
The quality of the ingredients used here is exquisite. Every bite reflected freshness – each dish felt like a treat for the taste buds and a symphony in your mouth, and you just can’t help but savor every single bite. The flavor profiles made me rethink what I knew about Japanese cuisine and what it means to navigate the delicate balance between honoring tradition and integrating boundary-pushing flavors.
The staff, chefs included, were exceptional, too. Oftentimes in high-end restaurants like this, its easy to feel intimidated as a guest, especially if its their first time experiencing something like this, but that was absolutely not the case. Each staff member was attentive, knowledgeable, and personable. Their welcoming demeanor began the moment you walked in and persisted until the final farewell. They displayed an impressive knack for remembering guests’ names and delving into everyone’ palate preferences, particularly regarding cocktails and drinks. Witnessing the synergy between everyone from the hot side, the sushi bar and the front of the house was great to see too – everyone moved together like a well-oiled machine where everyone was always in sync.
All in all, Craft Omakase is the apex of a sophisticated dining experience that’s nothing short of extraordinary. Honestly, I’m already planning my next big celebration there – I can’t imagine a better place to mark life’s special moments than at Craft Omakase.
