Beautifully decorated and very welcoming and relaxing atmosphere. Very genuinely friendly staff and attentive. Sushi chefs did a very good job of describing each item in detail and very easy to converse with. Almost all of their fish is imported from Japan very delicious good quality and fresh. I have recommended this place to some of my Japanese friends and they say it is almost as good as eating an Omakase dinner in actual Japan. I plan on dining here again in the future for sure.

For a 16 course omakase, I felt like the value was definitely there. I did find some of the courses to be underwhelming. None of the food was bad, some of the bites were amazing, especially when they used the right amount of acid. Service was very attentive and charming. Drinks were well balanced. Overall a lovely experience that could have had some improvement in the food, but at that price point I felt happy with my meal.

They recently changed ged their menu, which I think is a good move to keep regular customers coming back. However, I can’t understand why they removed the duck roll and replaced it with a taco. The shell is so hard that it’s difficult to chew, and the fried fish is quite mediocre as well. I really hope they bring the duck roll back. They also used to have truffle fried rice, but that’s gone too. It’s hard to understand why they decided to take the best dishes off the menu. The updated menu is far from as impressive as it was before. But on the bright side, the dessert yuzu cake is way better than before.

The smoking process of the kamasu was captivating, enveloped in smoke with a rich aroma. Paired with sakura leaf, it added a touch of freshness and the scent of spring.
💓HOTATE & FOIE GRAS
Thick scallops paired with delicate foie gras created a luxurious, rich, and smooth experience – absolutely satisfying!
💓AMADAI & BROCCOLINI
Still my favorite! The amadai, grilled with its crispy skin, made a delightful crunch at first bite. The broccoli and yuzu sauce added a hint of freshness.
💓MAITAKE MUSHROOM & TRUFFLE
The softness of maitake mushrooms merged perfectly with the intense aroma of truffles, evoking a rich autumnal essence.
To top it all off, Frankie made a special dish for me:

He presented this as a belated birthday treat, and it was incredibly romantic! The luxurious combination of sea urchin and caviar, along with the adorable pink heart-shaped macaron, is irresistible. Perfect for winning over a loved one's heart!

With my scientific background, I was eager to once again hit the chemistry room for some delicious experiments.
Last time I visited was at the the Sushi Lab rooftop (sister restaurant).
First impressions, the interior of the restaurant is beautiful. The wood panels on the walls and the minimal design brought out a welcoming and relaxing atmosphere.
The staff were very friendly, polite, and attentive - replaced plates and silverware quickly. You could tell that they were really focusing on trying to deliver a memorable and enjoyable experience!
The food was spectacular... some were absolutely mind blowing.. my favorite was the BAFUN UNI - SEA URCHIN from Hokkaido. I'm usually very picky with uni, but this melted away so gently and peacefully, it was one of the best uni I have ever had! But all the other courses were just as incredible. I only have one quarrel - the last two courses were the green tea and cream puff. Now, I love green tea, but I wouldn't consider that as a course. Also, the foie gras cream puff definitely had an interesting taste, but was probably my least favorite course. It was just a little bit of a sad ending to such a beautiful start! However, it still doesn't take away from the entire experience. A bit pricey - $125 per person, but definitely worth it. Also, the drinks here are phenomenal. I had the Mr. Chirisi (I think that's how you spell it), and it was top 5 cocktails of all time.

Very nice and relaxing place in the beating heart of Manhattan. We had the 12 course dinner and then we chose some extra on the Menu. The quality and freshness of the food was not doubtable. Special mention to our executive Chef Frankie who was so nice to us. Good selection of Japanese Whisky to finish the dinner off with a good drink. Definitely recommended.

Have you ever scientifically dined somewhere before? If not, Chemistry Room located in The Sanctuary Hotel has that perfect experience created by the Sushi Lab team. Their friendly staffs are always smiling while being very interactive during this scientific experience. They even use Periodic Tableware. The soup is in a beaker mug while the beer came in a graduated cylinder. On top of that everything is delicious and super super fresh which has umami flavors like you’ve never had before.Definitely brings back high school memories of Chemistry class and tasting something new. Chef Stephen meticulously prepped eachand every course with perfection. This evening they also had our favorite brand of Hokkaido Bafun Uni. It’s so good we had to order a couple extra pieces. They have rare and hard to get items from Japan! Chemistry Room by Sushi Lab got the recipe and they got the chemistry now go to resy and book your seat!

Food is fine but the server is TERRIBLE, rudest person ever. We arrived ahead of reservation time but are asked to wait outside until they call our name. Two minutes after our reservation time, I thought the server called my name( and her voice was super small, compared to the noisy environment). I tried to make eye contact and was about to ask if it’s us. She didn’t let me ask and directly told me,”One by one.” And she said the exact same thing “One by one” after we waited for more than twenty minutes for our drinks.

I went for the omakase with a friend. Much to our surprise, many of the courses were not sushi but noodles, fried rice, egg rolls, etc. Sadly, I found the food to be not all that flavourful. The service was prompt but felt rushed; food was served as soon as the previous course had been consumed, without any time for enjoyment or appreciation. Overall, I did not find it to be worth the hefty bill.

The tasting menu begins with hearty smoked miso soup with botan ebi base and konbu seaweed tofu, followed by baby white shrimp topped with ikura, persimmon, and lotus root. I loved the plump sea scallop with caviar, oroshi ponzu, and shaved truffle, as well as lean bluefin tuna with a dollop of tofu sauce. Another standout was the torched tile fish with crispy scales and broccolini. #Chefskiss!
The next round of innovative hot dishes before the sushi included sake cured mullet roe with angel hair pasta and goma soy, savory mushroom medley rice with koji marinated oyster and truffle, and deep-fried fresh water eel topped with foie gras snow.
The next round of omakase items features nigiri, including Sea Bream topped with konbu salt and lemon zest, smoked ocean trout with sakura leaf and crispy leeks, medium fatty tuna topped with white truffle infused quail egg, striped jack with tosazu vineger, fatty tuna with osetra caviar and gold flakes, sra urchin with tempura shishito and salmon ikura, and snow crab with pumpkin.

Spontaneously went with my friend for dinner, but didn’t want sushi so we ordered from their non-sushi menu. Unsurprisingly the food was decent but not memorable. The steak sandwich was a bit greasy, but the fries were good. Karaage was fine.
Service at the door was very pushy on selling the $100+ omakase. No wonder the restaurant was nearly empty at dinner time. Some people were turned away without being told there was a non-sushi menu.
The okay food and pushy front-door service makes it difficult to recommend this place. Not bad, but would not go back.

The food was fantastic - but I wish they didn’t rush us out so quickly. We had the 6:30 seating but they paced us through the courses so quickly that we had to eat 15 courses and drink 4 wine/sake pairings in less than 90 minutes… We didn’t really get to savor and enjoy everything! I wish they gave us more time and let us enjoy the meal.

It was a nice experience, overall, not great. Freshness, quality, and creativity were good. Service was also pretty good and the chefs were friendly and explained their creations.
We had the 15-course option and it was all pretty good with a couple of courses standing out. Unfortunately, flavor jus wasn't there. Seemed like everything was muted and not explored much. I'm not sure why, if it's a freshness/quality thing with the ingredients, preparation, or what.
I am a deep omikase fan and have had some epic and so-so experiences over time. This qualifies as "just fine" and not something memorable. I've had stand out omikase experiences on both coasts in San Francisco and Emeryville, CA and one in D.C. that were all top-tier.
It sounds like price-wise this is a compelling option. But, when in town again and wanting to have another experience, I would try a different one next time.

More creative than average omakase spots. They try to blend ingredients you wouldn’t think go together like tofu on your tuna or uni+tempura+ikura in one bite.
The experience overall is really nice sitting at the bar, with super friendly chef and you get to watch them make all the dishes. I thought a few were a miss, either not much flavor to it or an odd not so enjoyable combo. The Peking a-5 Wagyu beef didn’t taste like much at all, could’ve salted it more. The dessert was disappointing cuz you see foie gras cream but barely taste it.
My favorite was the Chawanmushi and tuna flight. They make their rice well here - temperature and vinegar proportion right where it should be.

Celebrated my birthday eve at @thechemistryroom with an omakase course as a luxurious treat to myself. The chemistry lab concept is cute (e.g. miso soup in a beaker) and I wish they’d dive in deeper with that theme!
The photos are roughly in order of how much I liked it, was surprised by it, and how memorable it was. Many of them were very unique. For example, the uni with tempura was such a great mixture of softness and crispness!

Very calm evening eating a nice omakase menu in a lovely setting. Not too busy, prices are reasonable for the 15 courses. The yuzu hotate piece was my personal fave, light and crisp with a tangy kick. The other pieces were alright, not as incentive as I'd expected from other reviews.

unfortunately the wagyu had too much mooshoo wrapper to meat ratio, as well as cucumber. this overwhelmed the wagyu and i missed out on getting to taste just the meat.
the miso soup in the beginning is one of the best i’ve ever had. along with the salmon and otoro sushi.
however this is more like a 18 course meal because during the “tuna” course you get three pieces of sushi. i left very full at the end haha but it was an amazing experience.
last note, the music choice i found very jarring for such a beautiful, classic space. they played remixes of older pop songs, such as friends theme song, never going to give you up, september, etc. it would have bothered me less if they played the actual songs rather than a remixed slowed down version.

Creative omakase with an earthy yet modern interior design. Food and drink prices were fair and the fish and other ingredients were very good. The only issue in my opinion is the location as it is directly in the center of tourist central. It felt like I went to war trying to walk over to this place from the subway. If you’re already in the area, I think it’s definitely worth a try.

It wasn’t authentic at all. It was more like a Chinese omakase. We were rushed all throughout. They kept asking us if we were still working on our food even when we were clearly working on our food. My stomach didn’t feel good after rushing everything.

The food was okay - not terrible, but nothing stood out.
Experience wise - this doesn’t seem like an omakase experience to me. They make the sushi to the entire restaurant all at once, very quickly, and it feels cheap and not special.
Don’t think the price is worth the value.

Food 4.5 stars. Service 3 stars. When I’m in a high end Japanese restaurant, I expect high end Japanese service. I’m not getting it here.
First when I requested the Sushi bar on my reservation made two weeks ago, we weren’t given the Sushi bar seats. They simply didn’t read the comment.
Then the service is lacking the sophistication. I can’t put my finger on a specific thing. It just feel very casual and missing the details. And we also got this feeling of being rushed. They want to make the same course for all the guests at once or something. If I’m finishing a little slower, I’d have a few dishes piled up in front of me.

I am surprised at (and disappointed in) myself that I have not reviewed The Chemistry Room before this. What have I even been doing??
I've been coming to Chemistry Room since it opened. If I'm in NYC I am going to eat at The Chef Counter at Chemistry Room.
At this moment in Culinary Time NYC is The Global Capital of Omakase. The quality, the diverse offerings and the value for your money are just unrivaled anywhere. You just canNOT get a better meal for your money than Omakase in NYC and The Chemistry Room is Top Level Omakase experience.
The Chemistry Room is fabulous. Every aspect of the experience is Next Level: gorgeous setting; excellent service; AMAZING dining experience. If you have an 8pm show to get to Chemistry Room 6pm seating is perfect. I know, I’ve done it. You do need to block out 1.5 hrs for your meal. The pacing is just right: no rushing, time to savor and experience each piece. You do need to arrive on time since we’re all eating the same 15 course meal and each course is being prepared right in front of you as the meal progresses.
My 15 Course Omakase last night was $125. There is no better dining experience in NYC for a comparable price.
The Chemistry Room Omakase always starts with their smoked Miso Soup served in an actual beaker like you’d use in a chemistry lab. Which, you know, is FUN. There is a theatre/performance aspect to Omakase that they really know how to accentuate at The Chemistry Room. As in the chef lights what I think are pieces of bamboo (??) on fire on a tray right behind the counter and then puts each beaker upside down over the little fire so the beakers fill with smoke which then flavors your miso soup when it is ladled into the beaker. Fun AND delicious! The miso soup has a Botan Ebi base and contains konbu and tofu. It is richer and more complex than any other miso soup you’ve had.
There was a second smoked course last night, Alaskan Wild King Salmon with Sakura leaf and Crispy Leeks. The depth of flavor in that piece of Salmon was crazy. But also some fun theatre and smoke!
I am including a picture of last night’s Omakase menu and pics of each course. They don’t give me enough words here to talk about each course. So! Standouts:
Tuna Flight: this counts as one course, but is 3 pieces served separately. All 3 are excellent. But the middle piece?? Sake Soy Marinate Chu-Toro with Oyster. OMG. Perfection. The kind of piece you put in your mouth and then close your eyes to savor every bit of the flavor experience.
Bafun Uni with tempura shishito and salmon ikura: I LOVE all these things and to put them together in this piece? Yeah. Heaven.
Shabu-Shabu Buri: whenever you age something the flavor deepens. Beautiful piece.
Peking A-5 Wagyu Beef in Moo Shu pancake with Shiso Leaf: Since I don’t eat beef they substituted Toro for me. GENIUS inside the Moo Shu pancake. You wouldn’t think that would give great flavor. But it does. Plus of course the Shiso. WONDERFUL.
I am also including the Premium Hand Roll menu. You can add hand rolls on at the end of your Omakase. I added Toro Tartare & Osetra Caviar and Scallop & Burgundy Truffle. I also had a bottle of sake. So I spent more than the $125 set price. And I’m telling you what, I would have eaten another Scallop and Burgundy Truffle hand roll. THE FLAVOR. Plus there is just no substitute for perfectly crispy Nori. The chef puts the handrail ingredients on the Nori and immediately hands it to you. The flavors and textures are just unrivaled when prepared and eaten that way. There is zero correlation between a handroll like these served at The Chemistry Room and any kind of sushi roll including nori you’ve had at a “regular” type sushi spot.
Trust me.
I have eaten at The Chemistry Room over and over again and I will continue to. I am never disappointed. It is ALWAYS a Perfect 10 dining experience. Ticks ALL the dining out boxes. Come for a wonderful solo dinner like me. Or dinner with your Bubbe (I witnessed that last night) or Date Night (I see that every time I go). You cannot go wrong.

I have rarely had such a thoughtful meal. Each bite was planned and considered. The menu ranged from perfect bites of sushi (garnished with everything from uni to gold leaf) to wagu beef served with truffles and smoked salt. The amount of food was, again, perfect and the chefs and staff infinitely considerate. The chef even arranged my place setting differently when he saw that I am left handed. We had the drink pairings as well which, again, were thoughtful in terms of taste and volume. I would highly recommend this restaurant and menu… so much so that I might go back again tomorrow!

The restaurant makes the food food the whole dinning room all at once. I understand that it’s easier, but as a customer paying this amount, i don’t want to be rushed to eat each course quickly. Food was amazing. My experience was tainted for this reason.

We had an absolutely divine experience here The food is exquisite and incredibly worth it for what you pay. Everything was timed well and each serving was tasting better than the last. Drinks were sublime too. The chefs explained every course and the entire dinner flowed like a beautifully rehearsed show where every nuance was given an immense amount of detail. Everyone was so nice and we loved the overall vibe in this place. We came in for a birthday celebration and I made note of this in the reservation. They remembered and even gave the birthday celebrant a complimentary glass of champagne! We’ll always remember this place and would absolutely love to come back any day.

Insane experience. Sushi Lab has managed to create a gourmet Michelin kind of experience for a fraction of the price. I believe the 13-course menu, including a varieties of fresh salmon/crab/caviar/ a5 Wagyu and more, was $150. This could easily be two or three times as expensive. I will definitely come back to this place.
Some advice: it’s crucial for the overall experience that you sit on the tables with a view in the chef preparing the omakase.

Awesome omikase experience and very reasonably priced (especially in NYC)! Excellent service, remarkable presentation of food, and all the courses were exquisite! Drinks were also delicious and beautiful. I would recommend sitting at the sushi bar to get the full experience and see the chef create the dishes and present it right to you.

Fun, creative and aesthetic omakase spot with spectacular service and ambiance. I loved all of the 'chemistry' elements in how some of the courses were prepared and served. Was it necessary? Probably not but it was fun and very on brand. The meal was surprisingly filling, some of the pieces were stackkkked. Most of the fish were from Japan and the scallop and uni were super sweet and buttery. There was maybe only 2-3 pieces that I didn't love, but they were still good. Service was spectacular, they offered my fiancé a free drink for his birthday. Overall a great spot to celebrate a special day.

One of our new favorites! My husband and I dined here for our anniversary and loved the food, service and drinks. The omakase was really creative, well presented, and of course delicious. Food was really top notch. Every dish was carefully prepared and with lots of interesting flavours. There were combinations that I was a bit hesitant when read the menu but the taste turned out to be amazing. All pieces with sashimi were the best. Had to say the dessert was so-so, not as enough thoughts put as the previous courses. All the ingredients were fresh and tasty. The cocktail pearfection was also very impressive. Highly recommended!!

I dined at the chemistry room March 18th and sat at the counter. The service was great, servers were very nice and attentive. The chefs were friendly, engaging, and were a treat to watch.
The food was great. I loved the quality ingredients/seafood prepared in interesting ways and with unique flavors/ingredients. Every course felt very curated and thoughtfully crafted. Albeit, this is not a meal that will leave you very full and I did not expect this going in :) This is very much an experience. My boyfriend and I went to Bleeker's Street Pizza after to be satiated.
There was only thing that I was disappointed in. Upon entering the restaurant, the waitress spoke very softly and asked my boyfriend and I if we would like flat or sparking water. I chose flat and he chose sparkling. At the end of the meal, it turned out that there was also the option for tap water which was free. I was charge $10 for the "large" flat water (Evian) and $10 for the sparking water... which was steep. I also don't understand how we were charged for larges, because we were refilled once. Kind of jarring, especially since I could have gotten a hand roll for $25. But whatever. It was not disappointing enough to sour the great experience. Plus, for a $250+ bill, what's another $20 haha.
For future diners reading this, just be warned! To the chemistry room, it would be great if you were more clear in the beginning and transparent.

Would prefer to give this place 4.5 stars given how expensive it was, but the fish justified it. Felt like the whole concept of a "chemistry room" stopped after the beaker of miso. Maybe I was missing something but that marketing didn't hit at all.

!!! We got ditching by The Chemistry Room because my girlfriend has shellfish allergy!!!
My girlfriend and I, make a reservation for sushi counter at The Chemistry Room almost 4 weeks in advance for valentine's day. My girlfriend has a shellfish allergy so when we book 1 month ago we noted that she has an allergy.
Today which is 4 days before our reservation, the Server on The Chemistry Room called us To informed that they will cancel our reservation because my girlfriend has shellfish allergy and they can’t serve her. And she still said that if we still want to keep our reservation, they will downgrade us to the table at the rooftop that downgrade can take care my girlfriend allergy but the fancy one can’t. which we don’t want that and we have a specific reason to book on counter at The Chemistry Room.
So my girlfriend asked about how many dishes will have shellfish so she can give it to me instead, the server can’t answer and let’s her hold for 20min. After she called back that server told on the line without mute that “shit I forget her” and talked to another person that “just told her we keep her”
So we talked to a manager. The manager can’t do anything only say apologize and said that they still going to take care of us but!!! With so unprofessional level of the service and that unwelcome attitude also the way that they ditching customer at The Chemistry Room. We are not sure that we should go because we not be welcome there even we pay the full price plus tip
We are so disappointed with the unprofessional service that they provide to the customers. First, they should consult in-house before giving a customer a call and should use some gut to prepare all information that the customer should ask before calling the customer and should not forget that customer is still on the line.
More importantly, I believe that it is very common for the customer who has an allergy still can go eat in the restaurant. But with the rude and unprofessional level of service at The Chemistry Room that chooses to ditch customers, I don’t recommend anyone who have same allergy to my girlfriend come to this place. We don’t want anyone have same the worst experience like us.
It’s rude our plan on valentine’s. The reason I give 5 stars because I want everyone to see this post. Even my girlfriend doesn’t want to but this restaurant is so unprofessional, rude, and ditching customers. we shouldn't come to them.

Just an amazing omakase experience! The space is beautiful with simple wood paneling throughout and the bar seats provide a wonderful vantage point to watch the chefs work their magic and deliver those incredible bites. The food was so good and don’t believe there was a bad dish all night. Highlights included toro topped with osetra caviar, A5 wagyu with bamboo charcoal salt, and a heavenly rich uni. Well worth it!!!

WOW! Best date night ever!
There aren’t words for this place. The lab omakase gastric experience is out of this world. Every bite was better than the last. Worth every single penny to take your tastebuds on a trip. The premium hand rolls are equally delicious. The quality can’t be beat. I’m not a fan of alcohol but the cocktails were also delicious- my fave was the pearfection🤩
Don’t think I can ever have a basic California roll ever again lol

Amazing experience – great food and great service. Seating at the counter is a must, seeing the Omakase being prepared and all the steps and ingredients that goes into each dish is a unique experience. The courses just flow into one another with each one being complimentary with the one before. The chef will tell in what order to eat it and what is in each plate. The service is superb. Will definitely go again

Lab Omakase - 9/10
My boyfriend booked @thechemistryroom for my bday dinner and it was one of the most delicious meals I’ve had in 2021. The service started off extremely strong with two of my favorite dishes of the night, the kumamoto oyster and the alaskan king salmon.
Honestly each course was delicious and the only critique I have is that I was a little disappointed by the dessert. It was brown sugar icecream in a casing similar to the samanco. I wonder how often they will be changing their menu items and I’m excited to come back!

Having been to Sushi Lab Rooftop and a number of Omakase places, it was just okay. The standout omakase piece was the Uni on top of tempura but everything else was just okay. In a city of many different omakase places, I would have probably taken my experience elsewhere, but glad we got to try it out so we know how the chemistry room was.

I first saw preview stories on IG of the Chemistry Room as it was about to open their new space, and immediately knew I had to pay a visit. Booked a resy a month and a half in advance for a special occasion, and glad I did because spots were booked out very quickly (and caught their promotional price of $100, and is now $125).
And it absolutely did not disappoint! The omakase menu was so unique and interesting, and stood apart from many of the traditional omakase places I've been to. Counter seating is a MUST, as you can witness the chefs meticulously preparing each course to come. And if you're lucky, you may get some extra leftover pieces lol my friends were like starving dogs, staring intently and hoping for any "extras" they may graciously put on our plate!
Overall presentation of each course, and most importantly, the taste, were outstanding. Premium ingredients were used, like caviar, truffle, gold flakes, etc., and generous portions, especially the uni. The wagyu was freshly grilled in front of you, and just melted in your mouth, you barely had to chew. Unagi sando was amazing too. We all ordered an additional premium hand roll at the end because well, my friends and I are all fatasses.
One of my favorite omakase in NYC, and Loved every bit of the experience, very highly recommended!

Hidden gem of a restaurant. $100 Omakase is pretty ridiculous, to be honest.
Truffle was a bit overdone on some of the sushi with the caviar, but it was a great concept.
The uni was destroyed by the tempura underneath, unfortunately.
Eel was spot on as a mini-hand roll. Cocktails were delicious. Matcha tea at the end was a bit light, but they needed to flip tables fast, so understandable.
Unbelievable value for $100. Worth the visit.

Very unique Omakase experience and definitely all about the counter seating. It was exciting to watch the process as each sushi course was being prepped by the chefs. The staff is attentive and friendly. It's an experience tried once or if having visitors in town.

Huge shoutout to the managing partner for being entirely accommodating last minute. I booked online prior to coming into town and was under the impression the Omakase menu was similar to sushi lab upstairs, and it was not. Although the menu at chemistry room looks incredible, our small party had various dietary restrictions. After the first host we met said there was no availability at sushilab, Jeremy immediately assisted us with urgency and transparency. We were greeted at sushi lab which suited us better per our restrictions. Our sever was also super friendly and understanding at chemistry lab. I would recommend anyone to chemistry room as the menu looks fabulous!
