All the poor reviews for this place is for entitled people who didn't make a reservation. If you like sushi it's a must stop. The price to fish ratio is insanely good without sacrificing quality. In addition, the people there are so nice and wholesome. Great experience. I would've made multiple reservations if I'd known it would be this great. A brilliant "hole in the wall", completely authentic sushi bar with stunningly fresh fish made by the master Hiro-san from Japan (I know that's redundant, but it's intended for emphasis!). The sushi literally melts in your mouth. I didn't have to chew. The service is brilliant, the sushi to die for, and the ambiance unpretentious and authentic. If you’re only on Maui a short time, you can call to see if there are any cancellations, or you can order to-go. For carry out, call a day in advance for pickup between 5-5:30p the next day (or another day).
There are only 2 people working (other than chef), so they may not pick up the phone right away. Try again or call later if they don’t answer during business hours.
If you’re not used to Japanese sushi, take a look at the pictures of the menu (on Google) and translate the menu before you go. Or, just order the Chef’s choice nigiri. The menu does change a bit based on availability, so it may be slightly different when you arrive, but you’ll have a better idea of what they have/what you want.
Small app and small fruit plate included with dinner. They have beer, wine, and sake available.
Service was outstanding, food was amazing. Totally worth the month+ wait. We’re already making our next reservation.
We ordered the sashimi combo, yuzu tai, blue fin oh toro, opakapaka, king salmon, unagi, and unagi roll, with a half bottle of sake. That was plenty of food for two at $175 minus tip. (salmon and unagi not pictured)

Most definitely the best sushi restaurant in Maui. It was some of the best we’ve had around the world. It is run by a Japanese couple and the only seats 11 people. Reservations need to be made well over a month in advance at the first of each month and they fill up with immediately.

Walked over to get some Sushi. Was excited. Walked in. Was 80% empty, stood and waited 4 mins till someone acknowledged me.
Then they said Oh no we only take reservations. Well they weren’t busy. To turn away someone hungry who walked a mile to come to their establishment. Not nice not welcoming and not properly advertised in the website.

We were hoping to get even take out as we heard so much about this place. We love locals telling us the secret places, and this place is no secret, but we never got to eat their food :(. I'm giving it a 5 star because I believe the number of people, but no one tells you to do it so far in advance! Called to get takeout a week out, and they said their takeout was pushed out two weeks, and their dine-in was a month! (Yes, they say they have like only 8 tables, but still! Man. I'm a planner, so I wish I had seen this sooner, so I hope this helps someone else who is a foodie)

Hands down THE BEST Sushi! The Chef is amazing and the service team is as kind and welcoming as can be. We were lucky to get a last minute reservation for 2. Book early. Just plan on coming here and start calling weeks in advance. To the Chef, THANK YOU for sharing your story with my wife and I. The best sushi I have had in Maui. This sushi is one of the top I’ve had anywhere. I’ve been to Japan before and this experience was better than my Tokyo sushi I had while traveling.
It is a small environment which means a well thought out and planned reservation is necessary but it is worth it. Order the omikase and let the sushi chef choose your meal and you won’t be disappointed.

April 2023 - got an impalas e platter which was just wonderful! Best sushi ever, so thoughtful. I love uni and it was served with salmon eggs which was delectable. We are getting it a second time in a week. Spicy tuna and the salmon avocado rolls welders great too. The miso soup tastes great, unsure if it’s worth 7 for a tiny serving.
June 2022 - We got takeouts last year and we’re lucky to get it twice. Best meal we had, tho ye even sell beer if you want it but it was quite expensive. Can’t wait to return and get some more. Keep up the amazing work and delicious food

Our last day on me and my husband’s honeymoon and nothing suited it better than this amazing dinner at Koiso Sushi Bar. We were extremely lucky to get reservations last minute as they are usually booked weeks in advanced. From the moment we were seated to when we left it was nothing short of an amazing experience as well as what I would say the best sushi I have ever had. It was our first time trying chef’s choice “Omakase” and it is definitely the way to do it. The fish melts in your mouth and tastes extremely fresh. Each piece you can tell is made with attention to detail and care. If you can, make sure to make this a stop on your trip to Maui.

Every experience sushi 🍣 experience at Koiso is amazing. Hiro is such a talented sushi 🍱 chef all his creations are artful. Our multi generation Maui real estate team loves eating here together. It’s always the best place to bring family, friends and clients. We always order Hiro’s Omakase where he chooses the freshest fish for sushi and sashimi. Koiso is very poplar with locals and visitors. It’s highly recommended to make reservations WAY in advance, as there are no walk ins. Everyone is so friendly at Koiso and The SaylesTeam always feels at home.

My partner and I have been coming here for 12 years. Every time we are on Maui, we make a reservation or two, months in advance. This time has been so different. The service is pretentious and rude. What is worse is that we made a reservation this time and asked to bring our kid which we did in the past and they said no due to Covid. So my partner and I made separate reservations so we could each take a night to come in without our kid. I walk into my reservation and there are numerous tables with kids! When I asked why, their response was that it was ok for those tables. When I asked if I can bring my kid the next night, they said no. Special treatment and discrimination much? I guess we won’t be back since we were not cool enough to have our kid at dinner.

Honestly the best sushi I have had outside of Japan. Keep in mind, this is authentic sushi and nigiri...you won't find sauces, tempura shrimp, or cream cheese here. I recomend the chef's choice nigiri plate! You need to make a reservation for this place far in advance.

This place is good, but it’s very small (which I like) and it takes MUCH effort to get a reservation these days; it was never like this even before COVID. The prices are quite high, and the quality is good. But not worth the effort and cost.

As a chef, the sushi here was amazing. You could taste the cut on the fish in your mouth it was that good. The experience was wonderful the service was attentive and polite but the technique and the quality of the chef was at a world class level. I would suggest to bring two people and order the entire menu.

As many have said - most of the battle is just getting a reservation in the first place. We had to call on the first of the preceding month right when they opened and it took about an hour of calling before we got through. The food is definitely worth the hype and it’s fairly priced for the high quality. We both got the omakase and it was enough for us!

Update: December 2020, Corona virus in full swing. Koiso has been totally updated with every possible precaution, social distance, plexiglass dividers between diners and the chef, very clean and sanitized, masks required to enter and Hiro, the owner has changed some of the decor so there is less clutter.
Beautiful hidden gem and of course, his masterpiece’s are artful and delicious.
Take out is available if you order a day in advance with a $90 minimum order.

The Sushi Chef and owner, Hiro is an artist. Well worth making reservations a month in advance, keep this in mind if you're only here for a week vacation. There are no drop ins, there only 12 seats and time slots fill up fast.
We always order the Omakase, Chefs choice, and the Ankimo. Mouth watering and deliciously fresh. We’ve also tried The black cod as an appetizer, wonderful!
Service is great, parking stalls are very narrow, there is a restroom outside the restaurant and requires a key.
Really, if you can get reservations, this is a must go to secret sushi restaurant, best on the islands.

The best sushi we have ever had. The Toro aka tuna belly was by far the most delicious. A very small spot with only seating for about 10-12 people. You must make a reservation or you won’t get to eat here. But it’s worth it. The only sushi spot to go to when in Maui.

They tell you you need to make reservations so we did, a month in advance and then we get the at our time and they tell us we never made the reservation and there is nothing they are going to do about it and just leave and go somewhere else. So fine we did and went to Miso Phat sushi and had a great time. Koiso lost just over 800.00 of service and 10 people for life. Never trying again!

Get reservations; we called again and were able to replace someone who canceled. I loved the quiet and relaxed atmosphere, the sushi clocks on the walls, and of course the very methodical sushi master expertly cutting fish and grilling eel behind the counter. He had several cuts of fresh fish and seafood and we enjoyed watching him work his magic, which was quick and perfected. We sat sandwiched between a legit Japanese older couple taking their mom out, and a young couple who had just come from the beach. Husband said it was the best octopus he had ever had, which is why he ordered another round before we left! Intimate setting and delicious sushi, thank you Koiso!

Hands down the best sushi on Maui. A true local Mom & Pop business that is booked weeks in advance. They don't have a web site and all reservations are made by phone 5pm Maui time.
When visiting any of the islands in this beautiful state, please seek out and spend your money at locally owned businesses. It makes a difference!

Koiso was one of the highlights of my trip to Hawaii and was so good that I went twice during my stay! Keep in mind, it is RESERVATION ONLY, so call in advance to make sure you can go. The establishment only seats maybe 15-16 people at any one time, but it truly makes for a genuine and one-of-a-kind experience. Watching the owner make sushi right in front of you is quite hypnotic, and the quality of fish you’re getting is well worth the price. Really, really enjoyed this place!

It saddens me to read any bad reviews about this place. I've read about slow service, few seating, and it being reservation only, but I don't think those people have ever been to legitimate sushi restaurants. I think this is honestly one of the best I've ever been to and I encourage you to not let any bad reviews dissuade you from coming.
Reasons why you should go:
1) Yes, this place is reservation only, and yes, the chef will actually turn away walk-in customers, but I like how he purposely does that to keep the environment intimate. The chef actually likes to talk to each customer and he seems like he genuinely wants you to have the best dining experience possible. There's a reason why the majority of the restaurant is filled with returning customers. If you buy a bottle of sake and don't finish it, he'll keep it on a shelf near the bar for you.
2) Omakase is only $45. If you've ever been to another legit sushi restaurant, you'll know that omakase is usually over $100 at its starting price. You may have doubts about the fish quality, but I assure you the quality is top notch. My wife and I each ordered one, but my only regret is not ordering another one.
3) Read reasons 1 & 2 again
So again, you should definitely go here to experience an authentic sushi restaurant, at a very reasonable price.

Was recommended by my Japanese friend and to get a reservation a few weeks ahead, which I did.
The place is a very modest sushi bar that only seats not more than 20 people. Walk ins are pretty much turned down.
My husband and I both ordered the omakase. It's the only way to go! You get 12 pieces of nigiris for only $45!!! That's so cheap considering the quality of the fish. We live in California and to get the same value we would have to pay twice of that.
The fish was SO fresh. We also ordered the blue fin tuna belly cause #YOLO!
Truly recommended if you are in Maui. But remember, make that reservation!!!!

Exceptional. Our sushi place back home ruins what other people feel is great sushi where they're from. Koiso may have in turn ruined our place being the best for us.
The owner was very charismatic and fun to chat with. Even better to watch him perform what seems like a perfected craft.
It's more traditional in the sense that the fish and combinations speak for themselves with little reliance on sauce like most others.
Don't bother trying to walk in, and good luck trying to get a reservation inside a week. Book this one well in advance, it's worth it.

We listened to the reviews and booked a month ahead of time. To say we are foodie snobs is an understatement. All I can say is, wow. I thought NOBODY could compete with our sushi spot in California. Different league here! Trust in the master and tell him to surprise you. Every bite melted in our mouths and tasted amazing. You can tell after 25 years, he not only knows his stuff but he loves what he does. If this is your first, fifth, or fiftieth time in Maui, BOOK ahead of time and go here. Will never be disappointed.

After a few years of trying, finally planned ahead far enough (1 mo res) to get into what's largely regarded by the locals as the best sushi on the Island. Further exacerbated by it's only a 10 person sushi bar and a single table - plus it's open for a few hours. You'd seriously never know its here if not in the know frankly but OMG what great sushi... and packed full of local Japanese aficionados (always a good sign!). Locals all have their sake and shochu numbered, tatood and on the wall :). I had to have his omakase featuring Japanese uni, made my wife a salmon skin and spicy tuna rools, chunky miso, and local honeydew for dessert. Hiro rocked it all. And yep, being a planner, I have an advance res for Friday too... hehe... mouth super happy! 😁

This sushi bar compares well against some of the higher-end places we ate at while living in Tokyo. We didn’t eat any “rolls” but the nigiri (piece of fish on rice) and sashimi were excellent. The uni, ikura and aji were from Japan and were delicious. There is a single sushi chef working at a very fast pace with extreme precision, if you like watching sushi prep you’ll be impressed.

With a little prior planning, you're in for a sushi lovers dream. I'm boggled by the negative reviews for this place- everyone at Koiso (staff and patrons alike) was friendly and cheerful. The place is small and the quality high, so of course you'll need a reservation. I called about week before we were going to be in town, asked what they had available, and had no trouble finding a day that worked. We arrived a few minutes early and were promptly seated with a smile. We loved sitting at the bar and watching the chef. We ordered a few pieces of nigiri, but the true highlight was the chirashi. It was gorgeous and delicious. Definitely the best uni I've ever had, plus mackerel, ahi, scallop, amaebi, salmon, etc. etc. all on a bed of perfect sushi rice.

Must try Omakase chef selection. The best 50 bux you'll ever spend. I have had sushi in Japan, Vancouver and Toronto. So far my favourite. Also there are some local Hawaiian fish that you dont normally get such as Opa and Opakapaka. Need to make reservations about 2 weeks ahead cuz they only open a few hours a day. Hiro the Sushi chef was on point with his balance of flavors. Would recomend trying 1 piece king crab sushi as it is rare to have also. Pretty much the I was told that all non local fish is imported from Japan.

One of the best food experiences I’ve had on Maui yet. Worth the week long wait for the reservation!! Make it ahead of time and don’t be late!! Pay special attention to the specials board behind the chef... some amazing items on there!

If you've read ahead of my review, you'll notice many low-starred reviews, all of them having to do with the supposed reservation requirement. And you will have noticed a few reviews where it seems the nasty lady at the entrance is making things up as she goes along. Like a NYC doorman at a club, it's obvious she's playing favorites. If she likes the way you look, you're in, no reservation required. That was my experience. I arrived just as the doors opened for business, no one was inside yet. I was told that I would not be allowed in because I had not made a reservation. At that very moment, along came an Asian couple who approached the door-lady with hugs and kisses... plus apologies for not making a reservation. She let them in immediately. Yeah, sorry lady, I speak Japanese, so I understood every word of your conversation.
When I got back to the hotel, I told our concierge what happened. He made a reservation for us the next day (despite the dragon lady telling me the restaurant was booked for weeks").
Upon arrival the next night, I was seated. However, as I sat at the sushi bar, a cockroach scampered across the wood part of the bar. I immediately got up, left, and went to a cleaner restaurant.
Why bother with this place when there's so many good sushi places on the island... without attitude and nasty bugs?

We were very fortunate that someone who was going there canceled their reservations so when we walked in we were able to get a seat! With that being said definitely make a reservation, because it is worth it! By far the best sushi we have had in a very long time. The family that works in there is so kind and genuine and the food is amazing!

Best meal on Maui. Maybe best sushi I’ve ever had. Super fresh. Everything is prepared with care. Excellent service. Called a day ahead and got a reservation due to a cancellation, which is lucky! Definitely worth calling to get in for this meal. We felt the prices were really reasonable for the quality.

Honestly, some of the best sushi I've ever had. We go here everytime we're in Maui and it's worth it. You have to make a reservation, which isn't that hard, but you get there and there is only seating for 15, and that makes it all the better. The chef it's very polite and nice and considerate. The fish is superb and amazingly prepared. The whole experience of eating here is top notch and highly recommended.

Honestly this has got to be the best sushi I've ever had! They're only open from 6pm till their last seating at around 8pm. Whilst I was here I watched three more parties of two people get refused as they had no reservation. The sushi is amazing literally the best I've tasted to date. I was lucky and rang the day before I went to get a one person reservation, I highly recommend going here, call first tho to make that reservation !

Amazing sushi - very small place, reservation ahead is strongly recommended - with 1 staff and 1 chef. I made the reservation a week ahead.
The ingredients is really fresh - both the chirashi bowl as well as the nigiri sushi are both very good. It's located in a small strip mall complex but there is a parking lot to park your car for free. Very close to the ocean.
Definitely will stop by when I'm back in Maui.

This hidden local gem was so good. I love how the fish was so fresh. The rice to fish ratio was just perfect!! We got the omakase and it was priced reasonably. I must say I love how the locals are here as you can tell the bottles of sale on the wall with a number on it are for them when they order their drink which I found very hospitable. I would come here again for sure

Customer service is just not there. You are required to have reservations!! Nowhere does it state that on their website or yelp ??. We waited for an hour to get a seat only to find out they only take reservations over a month away. Please state that on the door so walkins will know and not waste our time.

Well worth the wait. The sashimi combo was about as fresh and delicious as you can get, paired with a simple rainbow roll and not sake makes for an amazing dinner. Sitting right at the bar watching the prep is a real treat. Only 16 people allowed in the restaurant at a time!

If you want the best sushi on Maui, look no further. I will say however please make a booking FAR in advance (I'm talking months). You can get lucky if there are some no shows, but to ensure you get seated please make a booking.
So Omakase is very good. Chef Hiro is a pro at getting multiple plates ready, he plated the entire restaurant at once. But don't expect it to be different than what you see in the images. It appears his Omakase is always the same. It was fine because his fish is amazing quality. Everything about this place and experience was welcoming and authentic.
Side note: Edamame is unbelievably addictive, I have never tasted ones so flavorful.

I red numerous reviews on line and was told that Koiso Sushi was the best sushi on the Island and some people even say it's the best in the world, but I feel that is a bit of an exaggeration. I am not marking the restaurant down for unrealistic expectations based on reviews and recommendations, but simply because of the fact that I'm from Seattle, and can confidently say that there are 10 or 15 restaurants I have been to in Seattle many times that had better tasting sushi. I also graded down the restaurant because the omakase should change depending on the season and what is freshest, however it looks from photos and reviews that the omakase we had was the same as people being served 2 months ago, 2 years ago, and probably 5 or 10 years ago.
Overall the restaurant had some cool character, and the staff was friendly enough, but I can't justify the long wait times (I was told you need to book two or three weeks in advance).

YOU MUST GET A RESERVATION. It has become a drinking game between me and the wife... take a drink every time a party comes in and tries to sit without a reservation. Koiso is usually booked heavily a week or so in advance. Take heed and don't procrastinate.
The food is well prepared, and we get the omakase menu when we come in. The service is friendly, with the sushi chef front and center and one or two ladies assisting in the background. Hope Hiro has a long and fruitful life so we can keep coming back here for years to come.

Most amazing authentic sushi you can get! Hiro is an artist and served me up course after course of his masterpieces. If you come to Maui and don't go to Koiso your missing out so badly. Amazing service and the whole restaurant is always smiling and laughing. Best food I've ever had period. I'll definitely be back. Ask for Omakase and let Hiro change your life like he did mine!!!! Anyone who gives this place less than three stars is a dope. One review said they spent half hour trying to find the place. Dude. I know it's hidden in the back of a shopping center, but it wasn't that hard to find. Another review said he was discriminated against and was turned away when he walked in. Uhhh, its called a reservation, guy. If you read the other reviews before posting yours, you would have known that you have to make one at least a month in advance. Otherwise, if you walk in without a reservation and see an empty seat, it's being reserved for someone who doesn't have a sense of entitlement and doesn't cry and point fingers when something doesn't go their way.
This sushi was among the best that I have ever had. The fish was so fresh and the quality was superb. Not to mention, the quality of rice was exceptional as well. The presentation of the sushi was like artwork. Every time I look at the picture I took, my mouth waters. Service was also very good.
Seriously, if you have a trip to Maui coming up in a month, call them and make a reservation. Walk in. Ignore the fact that it's a small place and just try to enjoy that you're on a beautiful island about to eat some very high quality sushi.

Just walked in here and the lady took one look at me and told me they were closed. There is an open chair at the counter. But they wouldn't let me sit down. This is absolute discrimination. I can't believe that in 2017 an establishment is able to tel someone they can't sit down and eat just because of how they look... I would hope that any progressive human would avoid this bigoted restaurant.
To top it off. Some other guy just came in after they told me they were closed. They let him sit down.

Amazingly fresh sushi! Super fast service, extremely friendly. I can't get over the portions or quality. Decent selection of sake for a sushi dinner. Chef's special is the way to go. MAKE A RESERVATION! There are only 18 seats. It's the only way you'll get in.

Being from Vancouver where there is a abundance of sushi restaurants, koiso did not dissapoint. Very polite staff, fresh food and prepared properly. If you want a REAL authentic sushi meal come here. Other places in Maui do not even come close.

Everything about this place is amazing. The fish, the ambiance, the outstanding service. If you know what you like, go ahead and pick your favorites off the board. But if you don't, you will probably have a great experience with the omakase too. Favorites were the toro, anago (surprising!), and hamachi. Don't forget to place your reservation months in advance to make sure you get a spot--and likely one of the best meals of your trip.
