Tahk Omakase Sushi, Steamboat Springs' first traditional sushi restaurant, follows a traditional sushi concept called Edo-Mae and Izakaya. The Edo-Mae style of sushi refers to preserving and curing the highest quality sushi grade fish from the Toyosu Fish Market in Japan (formerly the famous Tsukiji Market). The most exciting dinning experience in Steamboat is at our Omakase bar, we offer chef's choice Thurs-Sat 5pm & 7:30. This is a special reservation, not just a bar sear, and can be made via OpenTable. The place is very nice with the Chef putting a nice touch to the atmosphere. We tried a bunch of stuff and were surprised by the quality of the fish. However, the rice in all sushi was not prepared as one would expect for the price you pay (felt kinda doughy) and the maki rolls were not good, they were supermarket quality.

The Omakase experience is the real deal. Super fresh fish. Not one choice was bad. Chef was engaging and made our evening and birthday celebration the best. The Manhattan and the old fashion was a great addition. We will be back when we come back to town.

Paid $400 for a “chef” meal with a TV in the background, no vibe, and a highly disinterested head chef. The descriptions of the dishes included the fish and where it was from…further questions received one word answers. Asked about the seasoning method that was so special, answer: makes the fish taste better. Thanks chef.
The chef didn’t want to be there…I would rather have been not spending $15 a piece of sushi by someone who hated everyone. Sushi was good…I’ll eat in basement next time.

The guy doesn’t care if you leave him a bad review. He’s a total jerk that will treat you like you’re a first grade student talking in his class. His food is very good, and that’s made him as arrogant as he could be. He moved to a small pond to be the big fish. He would never be able to run a successful restaurant in a city with any sort of legitimate sushi competition. He doesn’t think he relies on repeat business, but this sort of review inspired by his atrocious service mentality will sink his ship eventually. Good luck chef!

I wanted to give a good review, however I am sad to say that after several attempts to reach the owner to discuss our “experience” I never received a call back. The food is wonderful. I would stay clear of the “Omakase Experience “. It is not worth the money and isn’t much of an experience. Also be careful when reserving your spot as they messed up our reservation and did little to correct their mistake. I was given an email address to contact the owner John Ames and the email address is not a good email address. I also tried to reach out via phone message and Facebook message and all messages were ignored. We were seated in an uncomfortable location against a massive beam sandwiched between people not even able to leave to use the restroom and ignored during our $400 Omakase Experience. So sadly I would suggest to steer clear of this. The sushi was wonderful. Service and experience were and “F”.

Grant and Jesus behind the sushi bar were incredibly knowledgeable about every selection offered and eager to explain the profiles of each. we trusted them to suggest our sashimi dishes and it did not disappoint. wouldn’t skip on this place any time we’re in Steamboat. 11/10!!!

We did the Omakase chefs experience and the sushi and sake were very good, and the waitress was very sweet, engaging, and had good sake recommendations - but I had done the experience previously with a different chef and the level of interactment, engagement, and overall welcomeness of that chef (summer 2021) was significantly better, and honestly a large part of doing the Omakase again.
After last night’s experience, I’m not sure that I would come back (and pay for) that experience again. The chef had minimal explanation of sushi pieces, was short when asked further, and even seemed to ignored a couple questions from us. And it definitely took away from our experience. We were later told the chef that night was the restaurant owner, which makes it a bit more disappointing.

I would not recommend dining here. The sushi is just as good as any other typical sushi restaurant but the experience is awful. Chef was rude to his staff and didn’t care to be kind to his customers. He was grumpy, didn’t welcome us or explain the dishes to us when they were served like a typical Omakase experience. We ordered almost all the Nigiri on the menu and ordered an expensive bottle of sake and all of it was just average. One customer next to us at the bar asked him what the types of sushi was on his plate and he belittled him because he didn’t know which fish he ordered. Just totally uncalled for. I was shocked. Then he also cursed at another guest and kicked him out after he asked for his fish not to be torched. Really bad experience and would never eat here again, even if it was free!

I recently had the unfortunate experience of dining at Tahk Omakase with my wife, and it was a terrible experience. The chef and owner of the restaurant was incredibly rude, using profanity towards me and making the entire experience unbearable. My wife and I felt disrespected and unwelcome, and it left a sour taste in our mouths. I would strongly advise against dining at this establishment. Not only was the food just mediocre, but more importantly, supporting an owner with such poor manners and lack of professionalism is just not worth it. I urge you to choose a different restaurant where you and your loved ones will be treated with respect and kindness. It's not just about the food, it's about the overall experience, and this one fell way short of expectations.

We had an amazing experience at Tahk. I was a little concerned after reading some of the recent reviews about poor service but that was not at all our experience. We were pleasantly greeted by the host and quickly seated at our table. She also came by to check on us a second time during our meal. Our server Kelsie was very kind and attentive answering all of our questions and finding out the answer if she didn't know it. The food was outstanding as well. We live in Denver and have access to a lot of great sushi restaurants, so I was a little nervous about having sushi in the mountains but it was very fresh and delicious with different types of fish you don't see everywhere. My son and fiance thought the gyoza was the best they've ever had (I'm GF so sadly couldn't eat it). Lastly, the ambiance here was great. Very well designed with a chic authentic Japanese feel. We will definitely come back during our next visit.

My husband brought me here to celebrate my birthday with the omakase experience. The sushi was the best sushi I've had. However, the customer service was lacking, which made all the difference for me.
The restaurant is fairly pretentious and cliquey. If you're not a regular customer, you are not treated with the same respect as a regular. Sometime during the dinner, while my husband was speaking to the man next to him, the chef was presenting the next sushi. My husband hadn't heard what the chef had said. The chef decided to grill my husband as if he were a school teacher grilling a student who hadn't been paying attention right in front of the other guests sitting at the bar. The chef asked my husband what kind of sushi was in front of him. The bar went silent. When my husband didn't answer, I answered for him. The chef then went on to scold my husband for not having paid attention when the sushi was presented. I could tell my husband felt humiliated, and the man next to him (who was a regular customer) spoke up to tell the chef that he hadn't known what kind of sushi it was either. The chef made no response to the man's comment, and continued doing what he was doing. Admittedly at that point, we should have left the restaurant, but for some unknown reason we stayed. The rest of the evening was uncomfortable, and we felt out of place. The only redeeming qualities were the people we were sitting next to and the quality of the food.
When one is in the customer service industry, one should not be belittling their customers, no matter how great of a chef or whatever position he or she may be.

For the middle aged Caucasian lady that served me today on January 7th 2023, I hope you know that I’ve never had a server treat me with disrespect in all my 26 years of life. My 2023 was suppose to be a year of positivity & peace but your incompetence ruined that 6 day streak. It’s ok sushi place. but it’s in steamboat so i would say u can’t find anywhere else for sushi and sashimi place or Japanese whatever. Luckily they have Uni that I love. The cutting of the fish could be better and more neat if it’s in this scale of restaurant. Special roll is good. The sauce for the yellowtail serrano was just simple. But anything else I love the cocktails, Server and services. Reservation is recommended.

This was the worst dining experience we had in steamboat. I recommend going quite literally anywhere else. To start off we called with a question regarding our reservation and whoever answered the phone could not have been more rude or condescending. She acted like we were calling the best restaurant in the world and when we arrived we found out it was far from it. To start we were asked to sit at a table we did not book. We declined as we wanted the table downstairs that we had booked. Then we waited quite a while for anyone to acknowledge us or ask if we wanted a drink. The only positive of the entire meal was the server. She was very sweet and did her best. The food was just terrible. The appetizers were bland and small would not order any again. Then it came time to order sushi. We ordered the sweet potato roll due to the fact that we had a vegetarian in the group. Come to find out they are out of this roll and do not have ant other vegetarian rolls. This was very disappointing considering we chose this place because it had a vegetarian option. Nothing else was offered so we ordered the mediocre rolls on the menu. We ended up leaving half due to the quality and taste of the sushi. I would strongly recommend avoiding this place due to the food, the hostess, and overall experience. Complete waste of our evening in steamboat.

We live in town and made a reservation for my boyfriends birthday, we were sat next to the bar by a group who were loudly talking about explicit things.. clearly very intoxicated and very irritating. I’ve dined at many upscale sushi restaurants and the atmosphere didn’t match the quality of sushi they put out. Our server, who I normally can sympathize with, had two tables and forgot to put in two of our items. Nothing was said. Won’t make the mistake again.

A wonderful, cozy yet sophisticated atmosphere and lovely service.
We ordered miso, cucumber salad, Hamachi nigiri sweet shrimp and of course eel nigiri as well as a glass of saki all for about $100.
All was beautifully displayed and delicious. What I would love to see from this restaurant to give it 5 stars would be more wild and sustainably caught sea food noted on the menu. Only the salmon special was noted to be wild caught.
Additionally I was surprised to see so much blue fin tuna available on the menu, though a Japanese staple in sushi, the blue fin tuna is pretty much an endanger species to any well read foodie. Can we replace that with more bicatch options?

This place was so tasty and outstanding we came back again during our week-long visit. The sushi were some of the freshest and most melt-in- your-mouth cuts I've ever had in my life (try every cut of belly, japanese A5 wagyu, and the half fatty tuna). The staff are phenomenal and the aesthetics of the place took me back to the real authentic sushi shops in Tokyo. The sushi chef (and owner?) was very friendly and extremely helpful talking about the different cuts and suggestions. Thank you for the birthday gift, kanpai!

Very disappointing experience to say the least. Our waitress / bartender upstairs was super friendly, and the spot had a great vibe. Unfortunately our sushi came with a hair in it, which was less than appealing, but the reaction by the staff was most off-putting.
The gentleman who seated us did apologize, but the other waitress saying “is this one better? …You know we can’t be perfect, sometimes things like that happen!” was very off putting.
Would have been happy to give chef, our sever and the team a pass, but will never eat here or recommend it when people on staff have this type of an attitude serving fresh, highly perishable fish at a premium. Suspect chef and the owners would be beside themselves if they saw or heard this type of attitude in their restaurant.

Several weeks ago went for the Omakase experience at the 730p seating. The Chef/Owner did not welcome us (too grumpy)and was busy scolding staff for making him behind. The best was when someone lost a ticket resulting in the staff member
walking out after he was spoken to by the Chef. Later he
returned to his work station. We had wonderful food but a terrible experience. We spent $375+ what a waste of our time and money. So disappointed.

While I thought the fish was high quality and well prepared, unfortunately the rice was nowhere near the standard I would expect for this type of experience. It was dry, poorly seasoned, and cold. The rice was like supermarket sushi and not what I would expect for a high end Omakase meal. I did ask when it was made, and apparently they do it all in one batch prior to service. I was in the later seating (730pm) so it was in fact hours old. Most proper Omakase experiences will make the rice fresh for the service.. some even do multiple batches so the later portion of the meal has fresh rice.
In addition, the evening that we went, there was an enormous amount of tension between Chef Tahk and his staff. The bartender was scolded by Chef (something about a few misplaced tickets) creating a scene with the bartender walking-out mid-shift. Chef Tahk also berated a few other servers in front of the group, for not immediately responding to his beckoning calls. All of this created an awkward and uncomfortable dining situation. While I know he was frustrated, the chef needs to learn to deal with these issue in private while you have diners paying $95+ per person right in front of you.
All in all, while there is great potential in this experience, and I'd likely return for a 'standard' sushi experience here, I can not advocate for the Omakase at this cost, with terrible rice quality and the 'Kitchen Nightmares' style interaction between the Chef and his staff.

What a bizarre evening. We chose the Omakase service to get the best that the chef had to offer. The sushi was great but the chef (owner) was grumpy - he barked at staff in front of us and in another low point, scolded one of our party for talking when he wanted to talk ... maybe he was having a bad night, but his bad mood defined our experience.

Upscale vibe, a bit overrated. The fresh rolls are good. But for the price (20 per roll), have definitely had better. But the main reason for 3 stars is the Hot Geisha, it tasted like like lots of batter with canned tuna. Could really use a boost from something fresh to break up the fried mush. It might have been a mistake ordering fried sushi, but was hoping for something spicy. The other rolls we had were good, but don’t think they justify going back unless desperate for sushi. Overall left feeling the place was a little up tight and more style than substance.

This is the best sushi I have ever had. The staff are great, and the owner is really fun to talk to. A big part of the reason we keep coming back to steamboat springs is so that we can eat here. I highly recommend trying the Scottish salmon belly, it is so flavorful and melts in your mouth. The Omakase experience is definitely worth it.

My friends and I from MN were in Steamboat Springs for SBT GRVL and made a group reservation for dinner. We have enjoyed sushi from the Midwest and both coasts, and Tahk Omakase was the best sushi experience we have ever had. From Chef John's incredible experience, the sushi, sake, atmosphere and friendly staff are a MUST. We plan to return for SBT GRVL next year and are already looking forward to a return visit to Tahk Omakase Sushi. Thank you John and your staff!

The Omakase experience is the real deal. Super fresh fish. Not one choice was bad. Chef was engaging and made our evening and birthday celebration the best. The Manhattan and the old fashion was a great addition. We will be back when we come back to town.

Love this place!! First time here and I will definitely be back. We ate so much delicious food. Goyza and edamame for starters. Samurai, Yoshi, Krabby, and Geisha rolls. We even got the sake flight. Everything was so freaking good! The staff is fantastic Erin was our waitress and went above and beyond. Even the owner stopped by our table and said hello and thanked us for coming in. I can't wait to come back.

Tahk Omakase is an absolute GEM and a shockingly pleasant addition to the blossoming food scene in Steamboat Springs. It is hands down the best sushi in the entire State of Colorado. (Yes, better than Sushi Den in Denver). I lived in NYC for over 20 yrs and have had the privilege of being fed by some of the best sushi chefs in the world. Chef John has studied under many of them and the experience at his chefs table is top notch.
Unfortunately, the purpose of this review is to publicly dispute claims made 2 days ago by another diner who has since decided to try and disparage this fabulous tiny establishment. We were forced to wait 30 minutes for the other party to grace us with their presence so the shared omakase dining experience could begin. From there, they ignored, talked over, and eventually argued with the chef. If anything, he showed tremendous restraint not throwing them out half way through the meal. To suggest the chef was rude in any way is false and blatantly dishonest. At one point members of the party even threatened violence and disturbed the entire restaurant. They should be ashamed of their behavior, not posting bad reviews.
As a frequent diner at the chefs table, I can say that it is a privilege to have the opportunity to share a meal at Chef John's table. With his exceptional skills on display, he engages everyone in a friendly manner and it typically leads to new friends and a memorable night for all. He takes pride in teaching people about the fish and explaining his techniques. The entire staff is an absolute delight and work unbelievably hard to keep everything Covid safe without missing a beat service wise. With restrictions in place, it is incredibly difficult for people in this industry to even survive. Their efforts should be thanked and applauded. Purposely disparaging them and trying to harm their business is atrocious in itself in these times. When your party's behavior is outright deplorable, its far worse...

The quality of fish this cozy little establishment had available was superb, made us forget we were in a landlocked state in the mountains, and actually asked how they were able to get such a great variety of extremely fresh fish up the pass: they have a distributor who buys fish at a major fish market in Japan and flys cuts into Denver, where it's driven up the mountains multiple times a week to please our palates. This was some of the best sushi I've had in a long time, with fish cuts on the menu I've never even had before, and I highly recommend a visit. We'll be going back!

Super cool spot, the downstairs has some really great vibes as far as restaurants go. We split some of the chefs special which was delicious. We also had an appetizer which was amazing and had great flavor, I think it was the ceviche but can't recall. The dessert was also TO DIE FOR. It was a mousse cake and it was incredible.
Only downside to the whole meal was a very loud couple who spoke on speaker phone and FaceTimed a relative on the phone during dinner (for far too long, and due to the intimate setting of the space, they drowned out a lot of people's conversations). But, that's something the restaurant can't control.
Would highly recommend to anyone in the area! Just stay away from the people on speaker phone:)

Its my birthday right now, I'm still at this restaurant doing the omakase experience and I can honestly say this is the best dinner I've ever had. The owner himself is preparing the meal for us and it is top notch. If you like sushi, the omakase experience is a must.

Great experience...the head chef served my party of 6 for the Omakase dining experience and he was so friendly and informative with all of the questions we asked (even the silly ones). We had the 12 sushi serving along with 2 appetizers and had such a great time. Everyone wore masks the whole time and could not have been more accommodating.

Sashimi and nigiri were perfect. Pickled wasabi is a must. Good selection of sake. Service was great to start but quickly dropped off. Unfortunately, every table in the area became neglected. Witnessed the table next to us get up and search for the server to pay for their check. We waited quite some time for the last few items on our order when our server came up and asked if we were ready for the check. It was then that we reminded her that we still hadn’t received all the items we ordered. Service was painfully slow afterwards and our server was obviously overwhelmed. We found ourselves also searching for our server to pay. It wouldn’t have been so bad if the stools at the high tops weren’t so uncomfortable. If you’re making reservations, request a table or counter top seat, otherwise the stools are extremely uncomfortable!

Last year my boyfriend and I ventured out and found this hidden gem. We absolutely loved it and were very intrigued by the sushi bar option. This year we came back, as tradition for my birthday, and sat at the sushi bar. It was INCREDIBLE! Everything tasted oh-so-fresh. Perhaps the best sushi I have ever had! Our experience was amazing and felt exceptionally tailored and personal. All of the staff, from the wait staff to the head chef, were beyond accommodating. A special thanks to John, Sash, and Hide. Highly, highly recommend if you are a sushi fan. We will most certainly be back. Side note - I love the staffs “gear” - if they sell their merchandise they should advertise more - would love to represent with one of their sweatshirts.

thank you john, sash and meg for an unexpected lovely night at your sushi basement. our experience went far beyond a menu and the food. truly a great spot, even if everything in the county is currently closed to dine-in. enjoyed some of the best hot sake while waiting for our food. ordered a sushi burrito (fantastic), the bluefin tina sashimi (so delicious) and my boyfriend got the California roll which he said was the best he had ever had. thank you for your hospitality and personality.

This restaurant doesn’t seem much from the outside, but once inside, you step down into a cool, secluded, intimate space that will make anyone feel cool, intimate, and secluded (with your date hopefully, but still a perfect place to beat the heat and enjoy a sake on your own). The music and decor make you feel exactly where you want to be - calm, but excited for whatever culinary experience comes shortly after sitting down. The hamachi shots ARE for the faint of heart. Enjoy everything you can from this carefully cultivated restaurant. ❤️

This restaurant is like a little slice of japan within steamboat. The chef presented the courses and explained each of them. The flow of the meal was harmonious. Easily the best sushi I’ve had outside of japan and it was just as good as sushi in japan! Highly recommend

By far, best sushi in Steamboat. This is a true classic Japanese-style sushi restaurant, and an amazing find in a ski resort town. Very extensive sushi and sake menu, flown in fresh from around the world, including the famous Tsukiji/Toyosu fish market in Tokyo. To say everything was exceptional would be an understatement. Truly the class in Steamboat and possibly Colorado and beyond. Service was top notch as well.
